Right ho. We have quite a few pizza threads running so I'm going to see if this one will fit well with one of the others and merge them together because it helps people to find things. I know we've got one about pizzza without yeast - so that one's no good

I might well be wrong here, and I'm sure people will correct me if so, but I don't think you can actually use fresh yeast in a BM. There is a reason why but I can't for the life of me remember what it is, or where I read it, sorry

Was it not at all, or was it where I got the reduced quantity idea from?

I really don't remember the details but all I know is that for some reason I have lodged in my mind that fresh yeast is a no-no for BM's ... less info for my poor old brain to cope with that way"An Ye Harm None, Do What Ye Will"

All the recipes in my BM manual state dried yeast if that's any help??I'd rather be a could-be if I cannot be an are; because a could-be is a maybe who is reaching for a star. And in mine. I was wondering though, that if you were just making dough it might not matter so much...?
It says in my book book that dried yeast does not rely on sugar so much in order to ferment so it is easier to reduce the sugar content without having adverse effects.
It also says avoid yeast in tubs or tins as these tend to perform less well once opened.
Anyway - if you're making with fresh yeast and give it a warm drink of sugar first it might be OK.
I did it with bread the other day and it rose beautifully. Then collapsed about two inches as it started baking. I'll need to adjust the recipe a bit, I suppose.

i would have thought for dough making purposes fresh yeast in the BM would be ok...can't see any reason why it wouldn't be
As to whether baking in it affects the fresh yeast......no idea! lol
but then again i could always make dough and then put in oven

Quick ? foryou all. When making HM pizza bases, do I shape them prior to freezing or freeze the dough in a ball and shape when it has thawed.

My OH makes the dough in the BM-cooks one then the other 2 he puts in baking tins with oil and freezes as proper pizza bases. Takes them out when needed, puts topping on then cooks for 20mins and always turn out lovely
