    a bit of white wine never goes amiss!

    also believe some recipes suggest to add some caraway seeds, not to everyone's taste, though.

    when it's finished, you could stir in a dollop of creme freche/yoghurt/fromage frais for a little bit of tang

    On Masterchef the other week, they were saying that the biggest thing that lets most dishes down is not enough salt and pepper! I would also go with the hot parika. also, be aware that paprika loses flayour quickly, so if it has been in the cupboard a while it may be time to get some more :)

    I flavour my goulash with paprika, a couple of bay leaves, a small sprig of rosemary, a pinch of cumin and a few strips of lemon zest. I also deglaze with a tablespoon of red wine vinegar. This is more probably Austrian than Hungarian . The Austro hungarian Empire was quite lextensive so I guess cooking styles mingled.

    Goulash (and Stroganoff) really need hot paprika to get a decent taste (as well as freshly ground back pepper, crushed garlic and cumin).
    Julian Graves sell hot paprika - it's labelled 'Hungarian Paprika'.
    Alternatively, mix 3 parts sweet paprika with 1 part cayenne or chilli powder.

    I also add a can of chopped tomatoes and a squirt of tomato puree.

    Stirring in Creme Fraiche (cheaper than sour cream) just before serving lifts it from 'just a casserole' into something much tastier altogether.

    Having Turkey Goulash tonight, just about to chop the peppers, mushrooms and onions and set the slo cooker off.

    Yum Yum.

    Hi Polly, I am just new to this OS way of life and am looking for some different recipes and your Goulash sounds delicious and using the slow cooker which I am trying to master (along with my breadmaker) - my husband thinks I have been possessed by some strange housewifely apparition:eek: - never before have they seen me so much in the kitchen.

    Would it be possible for you to give me a rough idea of the recipe and method you use, please, if you have the time:D.

    Just like to say to everybody also you have me totally addicted, this site is brilliant.:T
