Recipe for Goulash

my kids had this at a friends the other night. has anyone got a good recipe they can recommend?

    Braising steak, cubed; onions, yellow and red peppers, oil, sweet paprika, cayenne pepper (if like spicy otherwise not necessary); soured cream (or creme fraiche also ok).

    Fry plenty of chopped onions in vegetable oil, add paprika and cayenne pepper (if used) and let it fry for a few seconds. Add steak and stir it in so it gets coated with the spices, then add chopped peppers and stir well. Add hot water until you have enough to make it 'casseroley' but not 'soupy' - if it makes any sense. Salt to taste (if you like, for better flavour, add oxo cubes instead of salt).

    Simmer for a couple of hours, stirring regularly and adding more water if it is getting too dry/thick.

    You should end up with a nice casseroley consistency. Let it cool a bit then JUST BEFORE SERVING you add soured cream to the whole thing.

    Delia says to add tinned tomatoes to this dish but I learnt if from my friend's hungarian mother, a wonderful cook, and she never used tomatoes!

    This should be ideally served with Knockedli (sp?) which are hungarian homemade lumps of flour, egg and water passed through a large sieve and boiled - they come out as mini-dumplings, but if this sounds too complicated, serve with rice.

    thanks caterina, i'll give that a go. does anyone know if you can do it in a slow cooker? ;D

    I see no reason why not, but I would fry the onions and spices first, and brown the meat.

    i have some of that in the cupboard, will give that a go, and will try in slow cooker too, and let you know how i get on. ;D

    For the best goolash in London, goto the Czech and Slovak Club in West Hampstead. Aviod the other foods on the menu, especially the starters; but the beef goolash with dumplings is exquisite!

    I thought you had to be Czech or Slovak to go there - I went there with a Czech friend many years ago and met some really interesting old guys, ex-pilots who fought in WW2, great people - but I did not eat there.
