    Regarding brownies. I have a recipe that I use all the time. When I am feeling extra generous or it is a special dinner/occasion I make mint brownies. I have done this for years now... I spread one half of the batter in the pan then put a layer of after eight choccy mints (the cheap version are about 99p and takes about half or less of the packet) and then the rest of the batter and bake as usual. Served with vanilla or mint icecream and it is to die for. I know not very OS, but everything in moderation .... I hope

    On the subject of brownies, I have a vegan recipe for them, if anyone wants it (no dairy, no eggs, no nuts).

    They're REALLY bad for you but damn they're tasty ;)

  • mine are in the oven...ooo they smell yummy. If they are as yummy as they smell I'll post the recipe! The mix looked very gooey! Vanilla ice cream also yummy and easy if anyone wants the recipe...

    Yes! In fact the most recent Nigella series (I find her cooing and pouting hilarious!) actually gave me a great, embarassingly simple, idea. In 1 prog she made quick bolognese using shop bought onion jam. Now I like onions to be very well caramelised and I know that if I want to use onions, it will take atleast 30 mins before they are sweated to my satisfaction. After watching this show, part of my weekly cooking routine (I spend an hour or so in the kitchen on Sundays - baking, batch cooking, meal planning, etc) is to chop and caramelise about 3 servings of onions and store them in the fridge so when I get home from work, as hungry as a hunter, that stage of the prep is already done.

    Such a relief to be back online - Microsoft Service Pk 3 completely blocked me from logging on the internet this morning. I downloaded it last night and spent a long time deleting it off today and lo and behold I am back now!! Apparently it upgrades ones firewall to such a degree that it sees any connection to the internet as a bad idea!!:rotfl:

    I made a huge apple crumble last night with real cooking apples (usually cheat and use plums or whatever fruit I have lying around. I diced them really small and made a huge one so plenty for at least 3 nights desserts. Also made the weetabix brownies over the weekend and they were quite nice. My favourite remains the Weetabix loaf tho - toasted it tastes a bit like hot cross buns cos I tend to add a little more cinnamon than the recipe says.

    Glad to hear you are doing well Weezl and miniweezl isn't asking you to binge out on Haagan Daaz or something!

    And I agree with you all about people not cooking anymore. It is really sad. My friend is 30, has 3 children and a husband and feeds them all on takeaways and oven food...shocking!!!!
    I feel proud to say, I am 23, and have been cooking proper meals since I moved out of my parents house at 17 and before...I was always taught to be independant. Was doing my own washing and ironing by age 13.....evil mother!!!!!!

    When using cups you can either use the american measurers if you have them or just pick a normal tea cup. It will work fine.

    2 crushed Weetabix
    1 cup of sultanas
    2 cups of Self raising flour
    1 cup of sugar
    1 cup of milk
    1 tsp mixed spice
    1 tsp ground cinnamon
    • Mix these dry ingredients together
    • add 1 cup of milk and the spices
    • Stir again and pour the mix into a greased loaf tin, bake at 325 degrees (180 degrees) for about 45 mins
    • Stick a knife in and if it comes out clean, it's done!
