MrsM.....oh my god!! You are really from here??? Now that is just way too cool, perhaps one day we will be able to meet up! that just made my whole day.:j
We live, literally on the edge of Sutton Lawn, in fact it is nearly my back garden. Now if the council would just let me have some of the lawn to grow veggies in :rotfl:
All roads are now safe by the way as I am obviously back home! Have my test a week on Saturday, will be glad to have it done with.
Just sat here thinking about what to make for tea, think I am going to make spinach and ricotta canneloni, but dont have any canneloni tubes so what I generally do is just use lasagna sheets, cook them and then roll up the filling in them. Much cheaper then the tubes anyway! Now must remember to take some spinach out of the freezer to thaw!
BTW Mrs M, I was born in Germany, went back for the first time a couple years ago, but spent most of my life in the States.
hmmmm just had a check of my chutney I made the other day, does not feel like the jars have sealed down all the way, seem a bit springy wonder if I should boil the chutney again and redo the jars. Dont want to waste the chutney as it is gorgeous!

Yes please Jennie -- I don't like blueberries, which is just as well given the price of them , so an alternative for muffins would be fabulous
cheryl, I have loads of muffin recipes i.e. banana, summer fruit, raspberry, cheese etc. If you would like any of them, just let me know as am always happy to share

Banana muffins sound yummy -- have vivid memories of my Mum making a banana cake after they had a recipe for it on Blue Peter (just a few years ago!)Cheryl0

first time posting on this thread, just been reading your nettle recipe's and hubby said he will try anything once so thought we would try the nettle pesto with some pasta, i take it you need gloves to pick them, are the smaller nettles better????? how long do you have to cook them for for them to loose their sting??????????? bit nervous i wont do them right
free food though i want to give it a go
Hiya mumsrus, and welcome!
A pair of marigolds and some kitchen scissors is a good way not to get stung!:o
We're past the time of year where they're most tender, but if you try to harvest just the ones that are brighter green with smaller leaves, and nip off just the top 3 or 4 inches, you should still get a nice flavour. Try not to pick any with big flower heads, and lose any stems that are more than 1-2 mm thick, they can be really woody!
3 mins cooking time should see off the sting. I microwaved mine for 5 mins and then snipped off the woody bits, cos I found it hard to do that with gloves on!
With mature cheddar and walnuts or pecans and oil, that should make a nice pesto.
Best of luck, hope you get a good crop.:T
Things that are very seasonal right now are blackberries, rowanberries and samphire, so you might want to look out for those too
Love Weezl x

This is the recipe that I use for summer fruits, strawberries, blackberries, bilberries, raspberries etc.
280 g flour
3 tsp baking powder
1/2 tsp salt
110-140 g sugar (give or take)
1 egg
240ml milk ( you can use skimmed as well)
90ml veg oil, or 85g melted butter. (I use olive oil sometimes but I am quirky that way!) I have also used apple sauce/puree for part of the oil
140-170g of any fruit (not bananas) under the sun. If your berries are frozen do NOT thaw them first!
mix the flour, baking powder, salt and sugar together. in another bowl or measuring jug add the egg and beat with a fork, add the milk followed by the oil/butter.
Pour all the wet ingrediants into the dry and mix just to combine it. It will be lumpy and this is normal. lightly stir/fold in the fruit as you dont want to crush the fruit.
I mix a bit of light or dark brown sugar with a little cinnamon or nutmeg or mixed spice and sprinkle on the top before baking, makes them sweet and a bit crunchy on top!
Divide into 12 muffin cups and bake at 190-200 for about 20-25 mins.
Banana Muffins
280 g flour
1tsp baking powder
1 tsp bicarb
1/2 tsp salt
3 well ripe bananas mashed
110 g sugar
1 egg, beaten
60-90 ml milk or water
90 ml veg oil or 85 melted butter
optional choc chips, walnuts etc
mix dry and wet ingrediants seperately, then combine. spoon into 12 muffin cups and bake for 20-25 mins at 190-200c.
You can also reduce the amount of flour to 225 g and add 60 g rolled oats to the wet mixture instead. a second note is that I generally always add a bit of mixed spice to mine and do a sprinkle of brown sugar on top before baking!
Muffins are sooooooooo quick, yummy and freeze beautifully. I even make corgette and chocolate and also cheese muffins. My fav is lemon and poppyseed tho!
Hope these are ok
