Spinach and ricotta canneloni...not got a clue on the recipe coz I only eat it when I go out to eat (or buy the now occasional ready meal), but is yummy...probably not very weezlite-esque though.....Now MARRIED!11/09/100

my only queries regarding the laundry room upstairs would be noise if you were taking advantage of economy7 and washing at night, the spin cycle might wake Fergus. and on a boringly practical basis how heavy our washing machine is, the idea of moving it upstairs would fill me with dread. having a spare room to dry laundry in/ have as a sometimes office would be cool though, you could fit a ceiling drying rack (would you then need an extractor?)0 -
For spinach canneloni/lasagne
I beat the spinach into ricotta with seasoning and nutmeg also nice to add softened onions and garlic -i have to have texture
Then make a tomato/veg sauce by chopping up said veggies n roasting with oil n seasoning (seem to be doing this loads just lately for the freezer)-you can blitz if you like smoother sauces..spoon over canneloni and then top with a basic white sauce and a sprinkle of cheese n bake

An Aussie friend mentioned these biscuits to me recently and I thought they looked like a good idea for this thread. (I think if I made them, I would halve the quantities and substitute the vanilla for some spice!)
Jam Drops
125g butter
75g caster sugar
1 tsp vanilla essence
185g plain flour
1 tsp baking powder
2 tsp milk
160g jam of your choice (e.g. strawberry, raspberry, apricot, plum or blackberry)
Makes about 40
Method:
Preheat oven to 180°C/350/GM 4. Line a baking tray with non-stick baking paper.
Beat the butter, caster sugar and vanilla essence until pale and creamy. Sift the plain flour and baking powder together. Add the dry ingredients and milk into the butter mixture. Mix to a soft dough.
Roll small balls of biscuit mixture with lightly floured hands and place on the prepared baking try about 5cm apart. Flatten each ball with a spatula to make them about 3.5cm in diameter. Make a 2cm-wide indent in the centre of each with your finger or the end of a wooden spoon. Fill each indent generously with jam.
Bake in preheated oven for 18-20 minutes or until lightly golden and cooked through. Stand on the baking tray for 2-3 minutes before transferring to a wire rack to cool. Repeat with the remaining biscuit dough and jam.
Store in an airtight container for up to 1 week.
Don't forget that dried prunes are delish (IMO!) soaked in tea. Just brew up some strong tea, add prunes and, if desired, any other dried fruit you have lurking (smart price sultanas?!) and leave for 6 hrs+ in the fridge. You can also add spices such as star anise or cinnamon. Consume whenever. V good with plain yoghurt, muesli, fresh chopped fruit such as banana or apple.

Not long back from the blackberry bushes -- reckon I've got around 800g of them, and that was without any real struggling to reach........
Question now is what to do with them all !! Thought I might get a couple of Bramleys (no free supply for me) and make a crumble -- but I think I'll be the only person to eat it !!
If I were to make jam, how long can I reasonably expect it to last? Just wondering if it's something I could do while holding back a jar or two for my Dad at Christmas, as he's the family member most likely to enjoy it.......Cheryl0 -

Bero! my, that's a blast from the past, my Mum used one of their cookbooks when I was growing up

have had 7 of my 5 a day today so feeling very virtuous! Also pilchards for lunch so good for omega 3.
Feel like I'm ticking all the boxes apart from the 'don't eat more than you usually do' one. Blimey that's hard! I honestly don't think I've ever been this hungry, even after walking 100 kilometers without sleeping (27 hrs solid, for Oxfam!):eek:

Ceridwen, I think we're just calling Fergus a 'he' cos 'it' sounds a bit impersonal! I don't think they'll let me know til the beginning of October at the next scan.
