Shazevening all, sorry I've been so neglectful of the thread, our decorating rages on and I have been just soooooo tired, even my inner geek has had little to say!
challenge-wise, all still good, no more spends since I last totted up. Fortunately the freezers are so well stocked that the budgetting and thinking has all been done for me!
Decorating is very very tiring (((hugs))) - freezer and meal planning is cracking, and - you've proven - very useful when you're a busy bee! How's the house looking now? I'll bet it's fab.So while I was chopping both for tea tonight I was wondering whether I could finely dice, bag, and freeze when I get them ? (came to me as I know I've seen both in the freezer sections of the supermarkets, but they're too expensive for me to buy that way). Would I have to do any partial cooking first?
You can freeze both peppers and onions pretty well, yes.
Peppers tend to be a bit better chopped and blanched, and WELL wrapped or there's an odd smell transfer that comes from them and onions if you've sauteed them to clear (mostly because raw onion can make your freezer smell a little and/or go soggy and the sautee-ing stops that. I gained some freegan chicken noodle soup as I had a bunch of friends round last night and several of them ordered chinese and got free soup as a bonus for ordering so much! None of them wanted it, so I stuck it on the side till it got cold and put it in the fridge and I've got it with me for my lunch :j0 -
Fudgy Choc Chip Cookies
2 eggs
1 cup lightly packed soft brown sugar
½ cup oil
1 teaspoon vanilla essence
2 cups self raising flour
½ cup cocoa, sifted
½ cup dark chocolate chips
Beat eggs, oil and sugar, and vanilla, flour, cocoa and mix to combine. Stir through choc chips. Grease some baking paper and roll up a log of cookie dough and freeze or put in fridge. To cook from frozen or fridge, just slice thinly with a sharp knife and put on a tray. Cook very quickly in an oven at 180C. I made the last batch putting them in the oven as I took dinner out and turning it off at the wall and they cooked fine. I got two rolls out dough out of this, so can cook one lot and then the next lot as you need it.
Experiment with freezing dough to any recipe you like though. Like I said, I have never had any probs. If the recipe tells you to roll it into balls then it should be okay to roll into a log and freeze. If it is a really runny mix and you drop spoonfuls onto a tray and leave em there it will not be...

a friend said that she read the ingredients on a packet of mints - they included potato starch and beef gelatine - just need the yorkshire pudding and you've got a roast dinner. reminds me of willy wonka's chewing gum that tasted like a three course mealweaving through the chaos...0 -

Just a quick one to say a very very big thank you for all the kind words. You are all becoming like a lovely extended family and it creates such a warm fuzzy feeling within me. Really cant thank you all enough and wish each and everyone of you all the very very best that life has to offer.
Life as been a bit hectic here to say the least, however DH has an interview tomorrow and has just gone off to meet with an agency as well. Keeping fingers crossed that it will all work out.
I must say that I love this thread, it is unlike any other, never a harsh word, always a helping hand in thoughts, advice or in what ever is needed. Just as it should be.

couldn't agree more. When I occasionally venture over to other boards, it always surprises me how sharp people can be - we never get that here. I would love to take part more in the green fingered board as I love to grow things, esp edibles, but it can be little frosty over there sometimes0 -
Courgette cake
60g sultanas (soaked in water until plump then drained)
250 g grated courgette
2 eggs
125ml veg oil
150g sugar
225g S R Flour
half a tsp each of bicarbonate of soda and baking powder
greased and lined 10 inch cake tin
beat all together and bake gas 4/180deg for about 45 mins or til golden and a skewer comes out clean
really nice bit like carrot cake perfect with a dollop natural yoghurt

Q about the courgette cake.....
I know carrot cake doesn't really taste of carrots (we all eat carrots, but I'm the only one eats the cake), but does the courgette one taste of courgettes? No-one (myself included) eats them in anything, but if it doesn't taste of them it might be a way of sneaking extra veg of a different variety into our diets.

Have only eer had courgette when my dad cooks it in a stir fry - think i will have to try it again. Is it sweet tasting?? or more bready?
Anyway - how are we all today? its widdlign it down here today and had 2 thunderstorms since yesterday afternoon - thought oh it sbene lovely all morning ill hang the washing out.............grrrr:mad: ....bet you can guess what happened next - yep torrential downpour.:rolleyes:

Well cooked a chicken last night so bf has taken lettuce, red onion mayonnasie and chicken sandwiches today after watchign that dispatches thing last night about sandwiches he mentioned that that meatball marrinara thing is what hes been living off in work the last three months:eek: :eek: :eek: :eek: anyone else watch it?? so hes having curry tonight as theres a fair bit of chicken, ive had sandwiches, and theres still enough for abotu 2/3 more meals and it was only a normal sized chicken!
Im now 9 days caffeine free too - woohoo, sadly though its that time of the month and so am eating anything sugary/sweet within a 3 foot radius!:rolleyes:Time to find me again0
