    Hiya, I'm a veggie from Yorkshire and I make lots of pancakes, and occasionally Yorkshire pud too! Living in Yorkshire I had to be able to make Yorkshires, didn't I?!
    The mix is exactly the same except that for Yorkshire Pudding it needs to be a little bit thicker. Add another spoonful of flour and see how that works... from memory the mix for pancakes is 4oz plain flour, half pint of milk and an egg... you mix the egg into the flour then beat in the milk... I have tried someone's suggestion to replace some of the milk with water to make lighter batter, and it seems to work. A friend swears by a bit of pepper in the Yorkshire Pudding batter too. The key to get them to rise is to have the oven (or in the case of pancakes, the pan) hot, then add the oil and let it get right up to temperature (180 in the oven, or in the pan, hot enough that a drop of the mix cooks in a few seconds) before adding the batter. Then don't open the oven door while cooking if you can help it! I heat all the oil first - only takes a couple of tablespoonsful - then pour excess into a cup between pancakes. It stays hot which helps the cooking). The same recipe works for waffle-iron waffles, but there I add about a tablespoon of sugar to the mix.
    Puddings take, I think, 35 mins (don't take my word for that), pancakes are ready to turn when the edge lifts easily and waffles take 1 minute per side.
    Well, I didn't plan on writing a treatise on batter, sorry. You asked for a veggie recipe and I have to admit I don't have a specific one, I would just have Yorkshires alongside a traditional meal, with gravy. As I eat Quorn I might use the beef-flavoured pieces but really Yorkshires are such comfort food I could eat them on their own. Diet starts tomorrow.
    The other way of eating them is with golden syrup as a pud. I learnt that one in London. ;)
    Have fun with making yours, I understand they were originally a filler so people wouldn't want so much meat, as meat was expensive, so very O/S.

    Munchki - sorry to hear your bad news.
    My OH was made redundant last summer and was out of work for 3 months. it is a worry but, as you say, you do have each other and that is what counts and keeps you going. At least you know where to come to help you save the pennies!

    Re thickening hm yogurt - apparently you can thicken it up by straining it through a sieve lined with muslin (or a clean j cloth!).

  • Just wanted to send a hug to munchki. My partner lost his 'high powered' job two years ago and our income dropped by 2/3rds even though he found another job. Wages down here in Devon are appalling! So we have had to learn to downsize.

    I wish you both the very best and am sure he will find something else soon. *hugs*

    Hugs to Munchki, :( hope you guys are okay, something like that would completely stress me out.

    But as you say, full fridge freezer etc. At least thats something. :)

    Had a free brunch tea at work, and helped clean up afterwards, and there was leftovers I popped on a plate in the fridge, and no one else ate em so I had em for afternoon tea. V yummy and free food all day today so far!!!!

    Completely out of the blue, my DH got called back up to the office and was just made redundant. No warning, no nothing. Well i dont think there is much else that can go wrong today eh?

    On a positive note, we have our health, full pantry and freezer and most importantly....each other. Of course I know that DH is NOT going to be in the best of moods etc tonight so think I shall be walking on eggshells and supplying lots of hugs and cuddles when needed:A
