  • My second batch was too runny! But it made great nan bread!

I used a drop of stir fry oil (infused with garlic and ginger) in a non-stick pan, sprinkled with fresh corrinander, and it was amazing! Much better than shop bought ones, and cost a fraction of the price (The corriander was home grown)

    Winky X

I am about to embark on a 3rd batch, any tips on how to make it more airy? I don't handle it very much, but it is very dense, so how can I make it more fluffy?
Right now I'm having amnesia and deja- vu at the same time. I think I've forgotten this before
  • the best way i found to wash my bowl was to leave it on the side for the day so that it dried out and then removed the dried dough from the bowl then washed it. I have only done this once though as i have used the same tuperware to make it in each time.
    Still Trying :o

    I'm beginning to panic.

Having waded through all the posts I went out and bought a 4.5 litre Tesco food storage box. Sent the DDs to smile sweetly at the Tesco baker, mission accomplished they returned with some fresh yeast. As per all the suggestions I added a tablespoon of it to some lukewarm water, salt and flour. Big mistake, huge, gargantuan mistake. Its growing like a thing possessed. An hour in its already 4/5 of the way up the tub and still expanding. The DDs think it is fab.

Obviously the tablespoon measurement applied to dried yeast.

I have never tried fresh yeast, sounds like fun though!
I made the brioche dough and my parents and it grew and grew all over he sides of the box, i took a picture to shw them and they through it was amazing!

Winky- You could try leaving it to rise for longer? I took a loaf out of the oven this morning and it is very light, make it ven more tempting to eat more!

This is my first post, so I hope i dont screw up, however I really thought peple would be interested in this method from hat I have seen whilst lurking in the backgrouond of the boards;)
I would consider this bread making technique to be OS.
This may sound like a promotion but I swear, do not work for the publishers, this book really has cut down on the amount of bread products I buy, (no more, bread, pita, batches & naan when shopping), and has increased the quality of the food I now eat. The preparation time is minimal aswell, the basic recipie make four one pound loaves, which is always a bonus.:j

You mix up the basic dough mix (NO KNEADING REQUIRED) store in a non airtight bucket/container, leave to rise in a warm spot for 2 hours. Then store in the fridge for up to 14days! (dough can also be frozen for around 3months, & just defrosted overnight in fridge ready to use)

Is the recipe that Bobbykins posted the one from the "artisan bread in 5 mins a day site"?

Spent ages looking at that site and couldn't find the recipe there
