    I've just sat down and read all 271 posts. I'm going to Mr Ts to get some yeast and trying this out. I don't buy bread because I live alone and it gets wasted and I hate defrosted bread. I'm so excited!!

    OK, I'm playing! I have just made up a (half) batch of dough, but it will have to wait till after work tomorrow to be cooked. It's going to have to be good to tear me away from my BM, but I'm way too nosy to stay out of threads like this!

    Im exactly the same! living alone i managed about 4 slices of a loaf before it started to go stale! I now have the bread in the fridge so when i get up first thing i can pop a loaf in the voen whilst im getting ready if I want bread for lunch, massive time and money saver!

    OMG this thing is a mutant! It just kept expanding till DH and I started talking about the scene from Sleeper where Woody Allen is trying to beat the pudding (is it a pudding?) into submission. Blinking thing was trying to climb out of the bowl, and DD kept staring into the bowl going "mummy, it's moving again!" LOL.

    Anyway, having thought I had plenty of room in the fridge, this thing grew and grew and then Mr T brought the weekly shop, so something had to give. So half the mix is in a box in the fridge and half has been cooked (probably breaking a few rules, but what the heck).

    It was very sticky (too sticky, I think) so I couldn't do any shaping worthy of the name, so a splodge got put on a tray and bunged in with some water. I don't have to do a smoke alarm check this week, as it triggered the smoke alarm. And then it grew some more!

    It is a lot like ciabatta (just a little olive oil would make it exactly like a ciabatta). Is that what it's "meant" to be like? I can see me doing it occasionally if so, but not as an everyday bread for packed lunches. If it was less sticky I'd put it in a loaf tin, but I was more intent on trying to get as much as possible off my hands.

    Considering loaves that I have lovingly mixed, kneaded, proved, knocked back, proved again and baked have invariably come out like little house bricks, I am almost annoyed that this stuff that I spent a scant 5 minutes preparing has come out like bread!

    Will be interested to see how the lump that is in the fridge will behave, and next time I'd make it less sticky.

    First time making a 1lb loaf in a tin tonight. It has just cooled enough for me to put it away. It looks good, tempted to eat some, but have resisted so far.

    For a softer crust adjust the amount of water used in the steaming, i didn't realise it but watching another of their youtube video's they put a broiler or roasting tray in to pre-heat too. When its heated enough chuck in a pint of water so it steams immediatly and put the bread in.

    I thin it should be renamed 'in 40 mins a day' as the bread needs to rest for 40 mins before going in. There is no 5 mins about it apart from the 20 seconds shaping it and 3 mins getting dough out from under your finger nail/wedding ring.

    You need to liberally flour the top of the dough so when you grab a handfull it doesn't stick so much then dunk straight in to a small bowl of flour so you can shape with out getting sticky. Or alternativly you can use wet hands if you dont want a floury crust but this gives a cob like crust.
