Just bought a pumpkin for a halloween carving with my son, and thought i'd make a pumpkin pie with the flesh, however the recepies i have found are all using tinned pumpkin. Does anyone have an idea about what to do with fresh, or anything else to make with it? Never cooked it before, but it seems a shame to waste it.

Last year I used Delia's recipe for Pumpkin Pie, which uses fresh. It's quite a mission as you have to steam it and then put the pumpkin through a sieve to get all the fibres etc out.
I think I have a recipe in one of my old fashioned cookbooks for pumpkin pie, I'll fish it out if you wantWe must all suffer one of two things: the pain of discipline or the pain of regret and disappointment0 -
I generally just chuck all the pumpkin flesh into a pot with a couple of tbsp of water and cook gently until soft. I then blend it with a stick blender and use in muffins or freeze for later use.
I think pumpkin is really nicer in savoury dishes than sweet. Big soups are great with other veg like sweetcorn, peppers, tinned tomatoes and some spices. Stews are good too with pulses like chickpeas or kidney beans.
You can also freeze it raw in chunks until you decide what to do with it.0 -
I made a pumpkin pie a few years ago - it involved cutting the pumpkin into pieces and baking in the oven to prepare it. It seemed to take hours, but the pie looked perfect when made (I got a recipe from an american website). everyone waited eagerly around the table for their share, took one mouthful and refused to eat anymore (including me!). There was nothing wrong with it, I am sure that if you like pumpkin pie it would have been delicious - but it definitely something that you either love or hate. Be prepared - pumpkin pie is now used as a threat in my house if anyone doesn't want the meal that I have made (and I really am a good cook!)Stash Busting Challenge waiting for inspiration:D :j0

I bought a huge pumpkin today and plan to make soup for tea.
I have only dont this once (last year) and it took ages to chop the skin off.
How is the best way to chop/peel the skin off? Is there I trick to it? Last year I used a vegtable knife chopped the pumpkin into segments, then chopped the skin off. I don't know if this was the right way.

I have only done it once. I cut the top off then scraped it out with a table spoon.0

try using a u shaped peeler - i use this for butternut squash, might work for pumpkin too0

sorry me again - another thing you could do is - bake it in the oven in chunks with the skin on then it will scoop out easily0

i plan to buy a pumpkin next week. aim is to make a jack o latern with nephew, and use as much pumpkin as i can rescue to make a soup.
if it is anything like butternut squash (a fair chance, seeing as they are both gourds), you can give the soup a more intense flavour by roasting the pumpkin before using it to make soup. chop the pumpkin into chunks, lightly coat with oil, roast on a moderate heat until tender.
the flesh will also come away from the skin much more easily once roasted.know thyselfNid wy'n gofyn bywyd moethus...0 -

Pumpkin risotto is gorgeous... I cut it into chunks then scrape the flesh away with an ice cream scoop. I can't believe I just admitted to that0
