    Savoury Pumpkin Pie

I want to move to theory. Everything works in theory.
  • Wow Pandora, that is a fab website.

Not quite the same as a pie but:
Toulouse Lautrec's Gratin (Jane Grigson's Vegegtable Book)

    2lb pumpkin
    seasoned flour
    oil
    1lb onions, sliced
    8oz chopped, peeled tomatoes
    breadcrumbs
    butter

Peel the pumpkin and slice into 1/4" thick slices. Turn in the flour and fry inoil till golden (not brown). Then cook the onions until soft in a little oil,add the tomatoes and cook to a sauce. Season with salt, pepper and sugar if necessary. Layer the pumpkin and sauce in a gratin dish, finishing with pumpkin.Cover with breadcrumbs and drizzle with melted butter. Bake at 180C for 45 mins until bubbling and browned.
    (paraphrased)

Would be nice as a veggie main, I think - in fact, both this and the cheese and pumpkin pie could be on the menu next week!

I was looking for this myself the other day - Google "savoury pumpkin pie" and you get quite a lot of hits, one of them is bound to fit the bill!

  • I always make curried pumpkin soup. delicious!!

    Approx 500g pumpkin
    2 onions
    1 carrot
1 sweet potato or regular potato
    stock to cover
1 sachet of squishy coconut milk
    curry powder - to taste
    garam masala - to taste
    corriander - to taste

Boil all together for about 30 mins, take off heat and blend, then add milk to thin out a little. I've also done this and added lentils for a more substantial meal.

I assume you have already cooked the pumpkin with the tinned tomato and onion ?

Why not just liquidise it now, and add milk OR veg stock to make it more runny ? Salt and pepper should be spices enough !

Have you got any garlic? I roasted some with cumin seeds (both whole and ground) and some onions in some olive oil and chucked those in with my pumpkin and thought it was very nice (though I say so myself!)
