Ideas for fillings for toasted sandwiches please?

Thanks to THIS thread started by Artofdookie I am now the proud owner of a toasted sandwich maker. Never having posessed such a thing before I'm totally at a loss as to what to use for fillings. Any ideas please? Veggie if poss!

Obviously anything with cheese, but for something a bit different how about mincemeat (the sultana kind, not the actual meat). When it gets closer to Christmas, a couple of these dusted with icing sugar are just the thing to get you into the festive mood. If you can, give the toasties a half turn partway through the cooking to make smaller triangles.0

Our Favs are:
Classic cheese and onion
Turkey, brie and redcurrant jelly
Sage and onion stuffing, cheddar cheese and chicken
Baked beans, bacon and slice potato (bacon and potato cooked first)

Ohhh, my dad (and I know this isn't veggie, sorry) used to make cheese on spam on toast, with a bit of ketchup on the bread! he used to call it swiss toast, bet it would make a great toasted sarnie!

I think there is mention of toastie fillings in some of the sandwich threads though you'd have to trawl through loads of stuff to find specific ones. Basically pretty much anything that will go into an ordinary sandwich can be toasted...
