Ideas for fillings for toasted sandwiches please?

Pizza toasties - start with cheese and add whatever you like to put on a pizza. A scrape of tomato puree, onion, mushrooms, chopped fresh basil, bits of salami, sliced olives etc. I think you could probably use some mozzarella, but I haven't tried it myself yet.
I've got some posh onion marmalade left from Christmas, a bit of that with sliced cheese is yummy
I know it's not veggie but I used to like ham toasties with sweetcorn relish, you have to be careful not to burn your tongue on the hot relish though
Thinking of veggie fillings - I wonder what hummus would be like in a toastie? Might try that soon0 -
Cornish Pasty Totally Yummy.0

Cheese and beans
Cheese and spring onion
Cheese tomato and spring onion (yum)
Whenever you make toasted sandwiches with cheese in give them a couple of minutes to cool before you eat them otherwise the cheese just pours out when you take a bite.Just run, run and keep on running!0 -

You can super quickly cook them in minutes no oven required.
And the bread catches any juices that run out.0 -
Crack an egg (very carefully) on the bottom slice of bread, sprinkle a few herbs in. Egg cooks in same time as bread.
Chocolate spread and nuts
Jam
And whatever there is in your fridge normally works quite well too!
I know it's a silly question, but you do know to butter the bread on the parts that go next to the hot plate? Met someone at uni who didn't, and spent forever cleaning my toastie machine to rectify it!Who made hogs and dogs and frogs?
