egg whites to use up

I've got 3 egg whites from Friday that I want to use up (assuming they are still ok).
Any ideas what to do with them? I could put them in an omlette but am not very inspired by that, or make meringue.
If I made meringue though would the meringue keep till the weekend? we don't really have puddings in the week.

Make macaroons.
Or I think you can freeze them, I'm sure Nigella says that she freezes them?0 -

Yep, I chuck mine in the freezer all the time & they're fine.
Instead of plain meringue or pavlova at the weekend why not make a baked alaska?
Lay cake slices in the bottom of an ovenproof dish (I use shop bought swiss roll for convenience, but you can use up any kind of cake/sponge)
Pile ice cream on top & then completely cover with meringue mixture, making sure there are no gaps. Blast in a hot-as-it-will-go oven for about 5 minutes til the meringue is light golden. Eat immediately.0 -

OOh, that sounds lovely. I remember being so impressed when I was young and my mother made a baked alaska.

Meringue keeps for ages.That's the hard,crunchy kind,not the soft stuff on a baked alaska.Just pop it in an airtight tin/box,it'll be fine till the weekend.0

Hi Everyone
Made a yummy three chocolate mousse for a dinner party tomorrow night, question is - what can i do with the six large egg whites? dont have enough time to faff about with meringues, any other ideas please?
I could always slap it on my face, fill in the cracks !!!

If you can't think of anything now, you can always freeze them - mix them up with a fork (don't beat in loads of air), then tip into ice-cube trays, freeze and once frozen, decant into plastic bags in the freezer.
If you don't fancy meringues, you can always defrost the individual egg whites and use them whenever anything needs to be floured, dipped in egg and covered in breadcrumbs (fish, escalopes etc.). Or you can use it to glaze pastry... or the topping on a lemon meringue pie (I know you said you couldn't faff about making meringues but meringue topping is different!). Freeze now. Decide later!0 -
