    Hmmm...thanks for that Jackieglasgow.

I am a decent cook, and I don't find anything too difficult in the kitchen, which is where I spend most of my spare time, BUT I have never, ever made a souffle... I think that now is the time to lose my souffle virginity! I've some lemons in too, so, looks like lemon souffle for pud tonight! :D

    Many, many thanks!

Freeze them in little tubs when you dontg want to use them straightaway remembering to mark how many are in there so when you come to defrost them you`ll know the quantity.

Throw the yolks back in and make scrambled eggs? Fritatta? Spanish omelette?

Here's a couple of threads which may help

    Egg yolks

    Egg white/yolk master list

Ill merge yours with the egg white thread later:)

A little bit of yolk won't be a problem. My tip when making meringues is to put the egg and sugar in the bowl together and then whisk, its much faster.

Ok, I am attempting to make Panettone (again), and I have 4 egg whites to use up (the recipe for Panettone asks for 4 egg yolks only). I know, I can freeze them, but I already have 5 in the freezer.

I don't really want to make meringues, but would like to make some sweets. I have some guests coming for cake and tea tomorrow, and this would be useful.

So, what can I make? I have sugar, flour, dessicated coconut, various dried fruits, nuts, etc.

    Any suggestions, please?
