    You'll have to beat it up and use as normal egg. I would think the bits of yolk would mess up your meringue. Scrambled egg for lunch?!

    Thanks but not enough yolk in it to be usable for scrambled egg.

    If you have even the slightest bit of yolk in the egg white then you wont be able to make a meringue with stiff peaks. You could get away with using it for something like royal icing, which only requires medium peaks - but the yolk is basically fat, and any fat in egg whites will make the mixture too dense for a stiff peaked meringue..!

    Thanks. The breadcrumb idea is a good one.

    But just after writing my post I was looking through an old file that I had when I was first married and learning to cook and I'd got a couple of pages in there headed "What to do with Leftovers" with several ideas under Egg White including macaroons which is what I think I'll do. Macaroons -- mmmm!

    PS I've added your breadcrumb idea to my updated list in my current kitchen book (along with the ideas from my old file)
