    Thankyou! I've been thinking meringues but imagined I'd need way more egg whites!
    Not sure meringues after biscuits will do us any good though lol! :rolleyes:

    I often make carbonara and am left with 1 lonely egg white. Can anybody come up with an idea for what to do with it as it seems a waste to throw it away.

    Freeze it for later. Eventually you'll have enough to do something interesting (meringues, pavlova, angel food cake) with.

    Or find someone on a diet and make them an egg white omelette!

    Beat it up until really stiff, then gradually beat in 2oz of caster sugar-a teaspoon at a time. It will become glossy. Put tablespoons onto a lined baking tray and bake for 30 mins at 140c. When they've finished cooking turn the oven off but don't open it and leave them in there until completely cool.

    You should have enough to make at least 2 meringues to sandwich together with cream.

    They keep really well in an airtight container.

    I have made some mayo and now have the egg whites set aside; I usually make meringues from these, but would like to do something else and just cannot abide 'binning' them.

    Any suggestions??
