Butter Beans

I have found a bag of Butter Beans in my cupboard, can't remember what I was going to do with them! Has anyone got any ideas what I could make with them?

    Three Day Soup:

    Day One:

    Put an assortment of beans and lentils into a covered pan to soak.

    Day Two:

    Cook them on the stove (in the soak liquid) if it has a miser setting or very very low (or in a slow cooker) with one stock cube per pint of liquid, mixed herbs, a tiny pinch each of garlic and ginger, one teaspoon of salt and one of ground white and one of ground black pepper. ( for at least eight hours )

    Day Three:

    Remove a good portion of the stock and set aside.

    Using some of the now cooled (?) stock mix 1 tablespoon of cornflour into a paste in a jug. Add more liquid (in small doses) to fill the mug with a well blended mix. Pour back onto beans etc. Add mince. If the mince is uncovered add some stock back until it just covers everything. Stir well. Cook on miser or very very low etc. for more hours.

    Remaining stock gets frozen for use in other dishes.


    I make this in four litre batches and my main ingredient is marrowfat peas.

    It's called three day soup not just because it takes three days to make - but because it takes three days to eat! :)

    I haven't tried it because I don't like peppers, but apart from that it sounds nice!

    Butter beans go well with Italian style food, pasta, tomato sauce etc

    I use tinned butter beans so you will have to judge the quantities for yourself, but this is yummy and SO quick and easy.

    2 x 400g tins butter beans, drained
    2 generous tbsps red pesto
    2 generous tbsps tomato puree
    Salt and black pepper
    Generous slug of EV olive oil
    1 x 500g packet of dried pasta (I like penne best for this)

    Cook the pasta according to the packet instructions until al dente.
    Meanwhile, mix all the other ingredients together.
    Drain pasta, return to pan, mix in everything else and serve.

    Quantities given here are for 4 helpings; I cook for one so I eat one and freeze three. It's the ideal lunch to take to work because the beauty of it is that it actually tastes better when reheated in the microwave, as the flavour of the pesto infuses into the pasta and beans!

    This is my favourite:

    One 14 oz tin of butter beans (or equivalent dried beans, cooked)
    2 garlic cloves
    One tablespoon olive oil
    2 teaspoons lemon juice
    One teaspoon sea salt
    Black pepper
    One average pack or half a pot of basil

    Place all ingredients except basil in a blender or food processor and blend until you have a pate which is still slightly rough - don't over blend.

    Add the basil leaves, fork them through and blend for 2 seconds. Check seasoning.

    You could also use cannellini beans.

    I like this spread on crackers or with a salad. You could probably use it as a dip like hummus, it might need a bit more oil to soften it up. It's a useful recipe for using up basil when the plant runs riot.

    Hi All,

    I just wondered if anyone had any good recipes that use butter beans in them - I am currently totally obsessed with them and want to use them all the time - they are fab in my vegetable lasagne and cottage pie and I also make bean salad - any other ideas ??
