I put them in chilli instead of Kidney beans. Yum!

Put them in an italian style tomato soup, blended or not.

Make them into a dip, wizz with garlic and oil.

Also had them mashed as a side with fish.

I throw them into any kind of soup.

Used a can the other day to make a hearty meal. Fried some sliced butternut squash with pepper and dried oregano, then into an oven proof dish, top with tinned toms and butter beans more dried herbs and bake in the oven for half an hour. Top with some grated cheese and cook for another few mins to brown the cheese. Serve with crusty bread x

We make a sort of refried bean filling for tortillas - fry onion and garlic, add butter beans and mash together, wrap in tortilla, top with sour cream. (We make a very, very spicy one alongside!)

I adore butter beans just as they are, but they also go lovely in stews, panackelty (a good old north east favourite), or mince and dumplings

Just a quick tip, if using dried beans, don't add salt til nearly the end of cooking, it stops the skin on the beans becoming too tough.

Normally I don't follow this rule, but I made soup the other day using them, only added salt when I was serving, and the beans were lovely and tender, skin and all x

Blend two cans of butter beans with one can of tinned tomatoes. Season. Throw in any herbs you like (I'd add a clove of garlic before blending). Heat in a large saucepan and enjoy.

Do not drain the beans first.

ETA: A dash of Worcestershire sauce works well in this.
