Butter Beans

Hello there
I was wondering if any of you kind folks can help me.
I have found a large bag of butter beans at the back of my cupboard...however they are out of date. The best before date is Jan 2010.
Do you think they are safe to soak, boil and then eat?
If not...what can I do with them? I would hate to waste them.
Many thanks in advance

They should be absolutely fine!..altho may take slightly longer to cook unitl they're soft, compared to 'newer' beans.

hi everyone,
i've picked up a tin of butter beans instead of broad beans, and i just don't fancy them "as they are" any ideas please?LIVE SIMPLY * GIVE MORE * EXPECT LESS * BE THANKFUL0 -
They are really great as a side with a little butter and herbs, but if you don't fancy that they'll be lovely in a stew.I believe in the freedom of spinach and the right to arm bears.

Hi,
just throw them into next soup or stew you are making, also good in hummous.0 -
Warm them up and toss in pesto - serves instead of potato / pasta with some grilled chicken.
Or drained in a soup with a chicken stock with shredded leeks and lots of parsley.
Blended with olive oil, lemon and mint as a dip for pitta (I like them on top of a baked potato)

They're lovely mixed with leeks and served in a cheese sauce. This thread has more ideas that might help:

I'll add your thread to that one later to keep the suggestions together.

Butter Beans love Butter, Cream, Cheese. A rich dairy product will enhance them no end. Add in garlic and onion plus either a wee bit of Indian seasoning (chilli, garlic, ginger) and other indian sp)ices (cumin, coriander, fennel seeds, mustard seeds, fenugreek, garam masala) for a creamy curry.
It is best if you make a paste of the spices before adding and fry them off so you don't get powdery taste.
Serve with rice, naan for a tasty meal suitable for veggies.#TY[/B] Would be Qaulity MSE Challenge Queen.
