    Thanks guys. Just been inspired and bought some butterbeans to try.

    Back in home ec lessons at school I never would have guessed I'd be buying, cooking and voluntarily eating:-

    lentils
    kidney beans
    now butterbeans - what next?? :D
    working on clearing the clutterDo I want the stuff or the space?
  • I bought dried butter beans for the first time and soaked the whole packet overnight......I now have a truckload of butter beans. My oh my, have they swollen!

    Er, any idea what I can do with 'em?

    Freeze them in can sized portions, then you can just take them out the freezer and use them when you need them.

    You can also make a sort of hummous with them instead of using chickpeas, much smoother but still really nice. Add oil, garlic, tiny pinch of chilli, salt, pepper and some tahini if you have it. Nice with toasted pittas or nachos!

  • I'd love to try some butterbean recipes, but they need to be simple, economical, low fat and low sugar. Have looked through the ones on here but haven't felt inspired yet! All suggestions welcome.

    I have them in salads for packed lunches, they really keep you going. They're also good for bulking up stews and soups.
  • I love butter beans This pie is a staple of my student days ...many years ago! Still make it and love it.
    Butterbean Pie
    8 oz butterbeans, soaked and tthen cooked.
    1 onion
    2 oz butter (or olive oil)
    1/2 tsp dried oregano, or use fresh, or even better is fresh basil
    2 Tbsps tomato chutney (apricot is good too, or mango)
    1 large tin chopped tomatoes
    1 tsp lemon juice

    Cheese Pastry:
    6 oz plain flour
    1 heaped tsp baking powder
    3 oz butter/lard & butter
    4 oz grated strong cheddar
    enough cold water to mix

    Fry onion in butter until golden. Add everything else to the pan and give it a good stir. Tip into an ovenproof dish. Make the cheese pastry the usual way. Roll out to the right size to cover your dish.
    Bake in a hot oven 450 F, 200 C, Gas mark 8 for about 15 mins until golden brown and risen.
    Great with a green veg like curly kale or sprouting broccoli.

    Can anyone help mu mum, she wants to cook butter beans in a tomato sauce just like she had as a girl at school - anyone remember these ?

    Mum has tried cooking them with a basic tom sauce and apparently its wrong !!!

    Nella Last in "Nella Last's War" mentions adding a "tomato soup square" to plain boiled beans-I wonder if the cooks at your mother's school did something similar. From my memories of school dinners in the 1960s the cooks were much more likely to add some kind of bottled or packet sauce to a dish rather than cook it from stratch.
