there seem to have been a lot of people on here and DFW board saying that financially, this time of year is an absolute nightmare. add into the occasion that a lot of you have got kids to feed when you're used to shipping them of to school with a packed lunch, and people are becoming rather frazzled :eek:
so i thought it would be good to have a thread where we can list our favourite quick, easy, cheap meals... things that will never be considered haute cuisine but are filling and satisifed.
i'll get the ball rolling with the suggestion of fish finger sandwiches. i had these for lunch today (the evil Mr T has aspecial offer on a box of birdseye battered fish fingers for £1) and they were bloody gorgeous. 12 minutes under the grill, make up a few rounds of bread and butter, get out the tomato sauce, and your ready for a paupers feast

I'm finding that the meals I make are getting simpler and simpler. How about bread, cheese and apples for lunch ? Why add anything else ?0

My favourite cheap and quick meal has to be potato hash, with loads of brown sauce - just like my nan used to make it!0

pasta, baked beans topped with cheese. Simple and YUMMY!

My fav meal on the cheap is pitta bread cut and popped in the toaster and then filled with coleslaw. The cold coleslaw really contrasts nicely with the hot pitta bread.0

I always do a roast on sunday.. get a large chicken which we only use the legs an a small bit of the breast then use the rest for my husbands lunch for the following week... saves loads on sandwich meat!
also chilli is quite cheap
1 onion chopped (red or white)
1 pepper chopped (green or red)
1 can of chopped tomatoes (value is fine!)
1 can of kidney beans
1 clove of garlic finely chopped
1/2 tea spoon of chilli powder
1/2 tea spoon paprika
mincemeat (experiment with quantity.. i use about 2 mug fulls)
Rice
lightly cook pepper & onion.. add tomato, garlic and spices.. simmer for a few mins.. add mince and kidney beans...simmer for about 20 mins .. while doing all this cook rice.
you can add soured cream and grated cheese on top if you like too.
All in all this costs about less than £2!! and will feed 4 people easily!

I do Gypsy/french toast. Bread dipped in egg and milk and browned in butter. My kids love it with obligatory tomatoe ketchup. Its great for using those last few slices of bread that are not quite as fresh for sandwichs. I have also done them up like a sandwich with cheese in them dipped in egg mixture then browned in butter.Who would like my last penny?0
