    Afternoon all

    Had a crap day yesterday as I had to attend a family funeral. So no breakfast followed by double cheeseburger and cheesy chips, followed by a sticky toffee 'concrete' dessert (all courtesy of Shake Shack in Covent Garden). Fruit for dinner and about 125ml of red wine. No idea of the Syns and tbh I don't really care ;-)

    Today, back on plan:

    Breakfast: Fruit salad (nectarine, banana, raspberries and strawberries) with Yeo Valley FF natural Greek style yoghurt with vanilla (Syn free? Can someone confirm?)

    Lunch - Grilled bacon, 2 Be Good to Yourself grilled sausages, grilled tomatoes, poached eggs and one slice of wholemeal bread (thick sliced from an 800g loaf) which takes care of my HEX B

    Dinner - SW Smoked salmon and cheese omelette with salad. Using lowest fat Philly (HEX A).

    Syns - 2 for the sausages, 2.5 for semi skimmed milk in drinks, and around 2.5 for salad dressing. Total 7

    Red Cola - I find Lidl to be super cheap for fruit, salad and veg, lean ham, chicken breasts, pasta and rice. Really good quality as well.

    Hi redcola.. i'm sure it can be done on a budget.. it may be better to stick to low meat meals as meat's a bit more expensive but you can make plenty of SW friendly meals that are budget friendly..

    I guess vegetables (fresh and frozen) and frozen fruit may be a low cost way of getting your superfrees

    Porridge for breakfast is cheap - even cheaper if you use water to make it and then just add a bit of milk or yogurt to make it creamy at the end.

    If you post what sort of thing you like to eat then maybe we can help plan a menu for you..

    Also try Jack Monroe's recipes some of them can be made SW friendly - the lentil burger one seems to be quite popular.

    RedCola - I don't actually eat baked beans, but I imagine if you like them, you could buy a big bag of potatoes (sometimes if you buy them from a farmer, or on the side of the road they are WAY cheaper than supermarkets) loads of basic value baked beans and have jacket potato with beans at least two days if not more. Like the others said, get your veg at Lidl, buy some big bags of pasta/rice there, they're much cheaper than supermarkets ummmm again if you can buy eggs from the farm rather than the supermarket - I pay £1 for half a dozen eggs at the farm, they're £1.40 in a supermarket I think? (I don't know it's so long since I bought them there). Meat is the expensive bit, so have as little as possible, I'm sure you'll lose weight quicker that way. You can get basic value tuna too... I'm not sure what it's like but probs okay to put in a pasta bake? I had minestrone soup for lunch today, I reckon that cost £3 for about 8 portions, I can post the recipe for you if you think you'll like it xx :) xx

    oh and lentil soup, I could give you a lovely recipe for lentil and bacon soup, that I think you could make for pennies - everso filling!

    Shala, the link to the website cheap meals is great. Definitely putting some of those on my plan, especially the Classic Cheese & Onion Pie and tht Egg, Tomato & Mushrom Chip Bake
    MuppElle. Yes please for your soup recipes.
    Seems discount shops & markets are the way to go. I really dont mind eating meat free, perhaps I could go Green for a while.
    We arent fussy as a family mostly, however my 5yr old is a different story. He will just have to deal with it though I suppose. Ive taken up the school meals that have become free as it helps, although Im sure he wont eat half of it. Plus he will have his snack they supply at break,, he wont eat it though. Just his milk that I paid for. :/
    My elder, less fussy ds is not entitled to them (secondary) so will have to supply him lunch. Then its my and dd at home each day & my husband works shifts.
    So have to take all this into account when planning

    RedCola, if you can, batch cook and bump things out with cheaper ingredients. So if you want some meat, buy a bit but make it go further in the meal with stuff like carrots and lentils.

    You might be surprised at your son, my daughter eats all sorts of things at nursery that she won't touch at home! Seems when she's sitting with the other children she'll give it a go because they are!

    Phew!
    4x tikka masala
    4x chicken korma
    6x speed soup
    5x aromatic chicken
    5x chicken and veg curry (own recipe using everything left over from batch cooking)
    4x shepherds pie
    4x mustard chicken and bacon stew (currently in slow cooker)
    Should keep me going for a bit
    Now off to stretch legs and back by taking dog for walk

    8 slices of trimmed bacon
    2 carrots
    1 large onion
    2 cloves of garlic
    4 cups of red lentils
    Vegetable stock or chicken stock (diluted in boiling water)
    Mixed herbs
    Saffron (not necessity)
    Coriander
    salt and pepper


    Cooking

    Fry light a large saucepan Add onion, bacon & garlic simmer for five minutes.

    Season with salt and pepper to your taste (but I'd go heavy on the pepper!)

    Add carrots, simmer for another five minutes

    Add stock, lentils and fill pan up with boiling water

    Add all the herbs Mix really well Bring back to the boil Cover with lid and reduce heat Cook for at least 20 mins

    Liquidise soup either with a blender or food processor etc until it is reasonably smooth

    Bring back to the boil You can either serve straight away, or heat back up when you are ready to serve, this also freezes well,separate into portions ready to serve to make defrosting easier.

    I can't tell you the measurements of this one, but it really doesn't matter, if it gets too thick add more water.

    Tin of cannellini beans (or you could use basic value baked beans)
    2 sticks of celery
    1 Onion
    1 pepper
    2 carrots
    Tin of tomatoes (I always use basic value)
    Clove of garlic
    Salt & pepper
    Mixed herbs
    pasta (I generally use the soup pasta, but you could just break up normal pasta or spaghetti
    Ham or bacon - optional if you have some lying about
    Cayenne Pepper and/or chilli powder to taste
    Stock cube

    Fry light the pan add in the onion and salt & pepper and brown, add garlic pepper, carrots, celery all diced quite small. fry for 5 mins. (if you are using bacon or ham add now)
    Add cayenne or chilli powder.
    Add in the tomatoes and then fill pan to the top with water.
    Add some stock cube and mixed herbs and cook all for 20 mins.
    Add pasta
    Boil for another 10 mins and taste. If you need more salt, pepper, chilli or cayenne add it.

    Serve :D Again I would freeze portions of this, My amounts are estimates, but I reckon at least 8 portions if not more

    Edit: If I was going to use baked beans, I'd probably rinse them in cold water first...
