    Crisp lettuce is nice when cooked,! When I worked in a Chinese restaurant they made a lovely peppered beef and mushroom dish with iceberg lettuce (just added at the end so it heats rather than going too soft) and lots of garlic. I wish I knew how to make it now!

    Not so sure about softer leaved lettuces. Tomatoes though, can be used in lots of dishes - soup, pasta and lasagna, pizza sauce, risotto, added to gravy etc. It doesn't matter if they are really overripe for use in cooking which is always good for the tomatoes forgotten at the back of the fridge!

    I too buy little gem lettuce as usually two tiny lettuce do bery well for me as I live alone I also like the long cos leaf lettuce.Which like the L/Gem I wrap in tinfoil and it keeps very well I never fany the bags of lettuce as I read somewhere they are covered in chemicals to keep them fresh.

    Well I gave it a go this afternoon. Used an onion, a carrot, more than half a bag of mixed crunchy salad and 2 and a half tomatoes. Discovered I didn't have any veg stock in so just chucked some beef stock in and hoped for best. It actually turned out ok, and quite a nice consistency so would probably make again

    My mum used to do that too! we used to have it every sunday eve with lo meat sandwiches.

    I've never thought about making salad soup... will have to give it a go the next time I've got some salad items that needs using up.

    I made lettuce soup this year when we had lots that had bolted. It was delicious! Seem to remember it was basically lettuce, onion, potato and veg stock.

    (Smooth)

    small potato,

    small onion,

    stock cube,
    small carrot

    Hi
    I bought a soup maker on a deal before Christmas, a bit of an extravagance I thought, but I loved to think I could throw everything in then go for a shower, get dressed & have soup for work. It suits me because I love things that can be left by themselves & are "one pot" such as slow cooker.

    Anyway I have used it about 4 times a weeks since-I love it!

    Have made broccoli & stilton -this was a bit runny, will put a potato in next time.
    My favourite so far was 2 packs of mini/baby fresh sweet corn reduced to 17p, creame fraiche, one small onion, Oxo, - cream of sweet corn -it was so yummy.
    • Have also done leak & potato.
    • Mixed winter veg
    • Cream of onion-with white onions
    • carrot & fresh coriander
    • spiced turnip -this was because I had huge turnip, had used some for mash with potato, then used some in the above winter veg soup, and needed to use the rest.
    • My other favourite is butternut squash-chopped it up with the skin on as well (disregarded the pips) and added onion. I think 1 large butternut would actually do 3 "fills" of the soup maker.
    • My most simple & easy and very cheap was 3 sad large pieces of sliced ham that no one was using for sandwiches before they had to be thrown away, and a tin of marrow fat peas-about 20p, onion & water. Made the most tasty pea & ham soup-without any chopping!
    In fact anything that is looking sad, out of date or bendy goes in there,!

    I like broccoli and blue cheese soup:


    Just use broccoli, leeks and potato plus a stock cube. (pre cook the potato) Let the soup maker do its work then add 3- 4 laughing cow light blue cheeses. Use the juice function to mix them in.




    I also like carrot and coriander. For this I use just carrot, potato and small amount of leeks. Plus stock cube, seasoning and coriander. Like above I precook the potato. Other than that it makes the soup for you.
    Paid off the last of my unsecured debts in 2016. Then saved up and bought a property. Current aim is to pay off my mortgage as early as possible. Currently over paying every month. Mortgage due to be paid off in 2036 hoping to get it paid off much earlier. Set up my own bespoke spreadsheet to manage my money.
  • My favourite is Broccoli, cauli, onion thrown into my soup maker with veg stock, then when its cooked throw in some boursin cheese with garlic and blend....absolutely gorgeous. I use a 400g pack of mixed cauli and broccoli from Mr T (£1.25 I think) I also keep a bag of frozen chopped onion in the freezer to add to soups.
