Thanks for all the replies so far. I think I will give it a go as even if it turns out disgusting it would only have been wasted anyway. I have an onion, tomatoes, a carrot and a big bag of crunchy salad so will see what happens!0

It's not a soup recipe, but I remember my mum always picking too many salad leaves in the garden. When there were some left that looked a bit limp or past their best, she'd shred them all up finely then add vinegar and put some chopped toms and cucumber, radish, etc., on top, and we'd all eat it regardless. Seemed to pep it up a bit.

Lettuce soup is lovely..not rank.Yep...still at it, working out how to retire early.:D....... Going to have to rethink that scenario as have been screwed over by the company. A work in progress.0

You can try chopping the salad leaves, mixing them in with some fried onions to stir fry for a few seconds then mixing them in with mashed potatoes to make colcannon. Fry this mixture like a flat pancake until crispy brown on both sides. The tomatoes can be frozen whole, or big ones cut into quarters and frozen. They're ideal for putting into soups and casseroles. But I wouldn't buy bags of salad, especially at this time of year if you're not going to eat them. Raw carrots and crispy red cabbage or the white coleslaw cabbage is just as good and will keep for ages in the fridge so is much better value.0

For the future little gem (and tasteless iceberg) keep better than most other leaves especially bags. Another tip is to buy baby spinach and use that instead.
I try only to buy things that I can use up so spring onions, peppers, tomatoes, celery are all great in a salad but easily used up afterwards.0 -
Afraid I'm a bit fussy and won't eat raw carrot, or spring onions or radish or spinach. Don't like cucumber either. Only salad veg I like are most lettuces, tomatoes, peppers and red/brown onion. Hubby won't eat any salad veg and neither will toddler. Hence why I struggle to use up as hardly any meals we eat incorporate salad. We do eat plenty of other veg though. Thank you for all ideas so far!0

I would recommend that you buy whole lettuce or endive. Remove the plastic bag to stop them sweating rather then the pre-cut bags with modified atmospheres.
Remove as many leaves as you want from the outside and keep the lettuce somwhere cool and dryish if possible. If it gets limp, cut the end off, add a couple of mms of water to a mug and drop the lettuce into the mug so it can draw up the water.
Lettuce and pea soup is nice, or learn to cook a l'anglaise.If you've have not made a mistake, you've made nothing0 -
We seem to have forgotten the tomatoes. There's always home-made tomato soup.
PS. A Jamie Oliver tip: include the stalks. It gives the soup an amazing "tomatoey" aroma and flavour.If you fold it in half, will an Audi A4 fit in a Citroen C5?
