  • I was hoping some of you might share your favourite recipes. I make soup in batches, freeze and take to work for lunch and I need some fresh ideas. My prize recipe is for Pear and red pepper soup (really tasty)

    1 onion
    2 pears
    2 carrots
    2 red peppers
    large handful of red lentils
    chicken stock

    chop and soften all veg, add approx 1 1/2 pints stock and lentils. Simmer for 20-30 mins and them whiz with a blender.

    One of my favourite soups is prepared with courgettes and evaporated milk.

    Ingredients: 5 courgettes, one big tin of evaporated milk (the 410g ones) and optionally a veg stock cube.

    Directions:
    - dice the courgettes
    - add as little water as possible and optionally the stock cube
    - let simmer 20 mins
    - add the milk
    - blend
    - season to taste (I like mine with lots of black pepper).
    - add a bit of water if the texture is too thick.

    My favourite autumn / winter soup is curried parsnip & apple, and can easily be made in a slow cooker. Cook parsnips + about 1 cooking apple to 4-5 parsnips in veg. stock with curry powder or paste to taste & a little lemon juice. Liquidise with some cream or creme fraiche and adjust the seasoning.
    You can vary the proportions of every ingredient as it suits, and it is still nice without the cream.

    Another variable favourite is corn chowder, mostly made with left-overs:
    fry a few potatoes, with some bacon bits (I usually add some red pepper if I have some); add a tin of sweet corn & milk to taste, and stir in some paprika to taste. Again you can make it rich by adding some cream / creme fraiche, and garnish with parsley. I have also made this with smoked salmon trimmings instead of bacon and totally recommend it for brunch after the night before.

    My favorite is Pea, ham and potato although its more like a stew than a soup:rotfl:

    1/2 tin of potato

    1/2 onion

    1 tin mushy peas

    1pt ham stock saved from when I sc gammon joint

    Lightly fry onion, put with all other ingredients and slow cook .
    Add whatever herbs you fancy. I like lots of black pepper too.

    This is so cheap, less than 20p

    this recipe is good and can be as cheap or veg packed as you like it :) Oh and this one

    this formula from thriftlady may also be useful to start "making your own"

    Was looking for a good recipe for cauliflower soup and this one referred to seems a bit bland to me. Have an idea of how to go about it but dearly wanted to avoid something that ended up looking and tasting like a pur!ed cauliflower cheese! Think I'll go with 5 spice and paprika unless there are any other suggestions?
