  • Carrot and coriander:

    Saute about 5 large carrots with 1 medium onion for 5 mins, season, then add 2 litres of chicken stock. Simmer until carrots are tender then add half a packet of fresh chopped coriander and a good glug of milk and simmer for another 2 mins. Whizz in blender. Delicious. All my other soups don't compare to this and it's so simple too. :)

    Mine today was the chicken stock from the bones I boiled yesterday, the leaves from a cauliflower (yet to be eaten), a skinny leek, the green tops off my spring onions, two carrots, a handful of mushrooms and a sprinkling of Red Lentils.
    Seasoned with Salt, Pepper and some soy sauce.

    How much it cost I have no idea as these are all things in my fridge and I have enough for two days or one portion for two.
    Everything has its beauty but not everyone sees it.

    Hi everybody. Im new to all this OS cooking but im really enjoying it now. Im making home made vegetable soups atm due to the cold weather. Does anyone know the cheapest place to buy lentils etc to bulk out the soups. And could anyone advise me what they use to bulk out soups (mainly i need protein/fibre based products). Also i have no idea on what herbs and spices to use. Any advise would be greatly welcome. Thanks :) Edited just to say, the cheaper the better :D

    I make loads of vege soup but as well as fresh veges i add some dried soup mix and some pearl barley.

    Morrisons do a super soup mix... it has lentils, barley etc in, you just soak it over night, then make into soup...

    A top tip....
    Always base your soup on abotu 1/3 onion. Potato is a great way to bulk out and also helps to thicken a soup.

    cheap ways to make one, get the above mentioned soup mix, soak.
    also buy a pack of the cheap bacon offcuts.

    chop 2 onions finely, saute in a large pan with some of the bacon bits,add some mixed herbs, add the soup mix and some boiling water, simmer for the cooking time of the soup mix, add black pepper to taste. you dont need to use stock cubs as the bacon has plenty of salt in it.

    My favourite is to cook a piece of gammon (usually about £3.99 per kg in Lidl or Aldi) and keep the stock for soup. The gammon is lovely sliced in meals or sandwiches and freezes really well. Add lentils to the stock and some onion and carrot and diced potato plus any scraps of gammon that fall off when slicing. It's yummy.

    but I use my own stock and add extra veg. A handful of sliced leeks is good too (I use frozen ones from Farmfoods) and perhaps some celery if you like it.

    I usually buy my lentils (red ones don't need soaking) in Lidl or maybe worth checking out an Asian grocer if you have one near.

    Put (soaked) dried peas in the water when boiling a bacon/gammon joint and then make this into pea & ham soup.

    Just make lentil soup.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    I buy red lentils either from Asian stores or the foreign food aisle in Tesco which are cheaper in the large bag than the small bag sold elsewhere in the same store.

    I make a spicy tomato and lentil soup.....

    Cook 6 ounces lentils in water with a couple of chopped onions. Add a couple of cans of tomatoes....contents....to the lentils.
    Add a teaspoon of curry powder or some chilli flakes to taste.
    Cook for about 20 mins.
    Blend.
    If too thick add water to get the right consistency. I add milk too.
    Serve.
  • Hi thankyou for all the ideas, also i forgot to say ide rather have vegetable based soups rather than meat as im trying to keep the price down, hence adding the lentils. Is there another protein based foods like lentils i can add.
