For something festive why not make up two batches of sweet pepper soup, one green and one red pour both into the bowl at the same time so half the bowl is red other green, or even do a candycane splash of red peppersoup in the green and do the candy stripes with cream :)

Spiced butternut squash soup is lovely, easy and although I tend to use a curry spice mix it is equally good with a morrocan-ish blend (so cinnamon, cumin, coriander and chilli) so nice and festive flavours. Simply roast chunks of butternut squash in the oven with a touch of olive oil and the spices, fry onions in big pan, add squash and stock (chicken or veggie can quite easily be stock cube) and simmer for about 20 mins til all nice and soft then whizz till smooth and test for seasoning. You can add milk or cream to make it a cream soup although I prefer just to add a pretty swirl of cream to each bowl before serving.

Roasted Root Vegetable soup is lovely, just chop parsnips, carrots, sweet potato and red onion into large chunks add 3 or 4 cloves of garlic and some olive oil, roast in the oven until soft then blend with vegetable stock, serve with a sprinkle of nutmeg salt and pepper and single cream swirled in at the end.

I normally make a pot of soup at the weekend and freeze it in portions for lunch during the week, but I'm getting a bit sick of the ones I make: carrot and coriander, leek and potatoe, spicy lentil, mixed veg.

So, I'm looking for some tried and tested alternative (simple) recipe options for the next few weeks - and they must be suitable for freezing.

Can anyone make any suggestions (and link to the recipes too please)?

Is bean soup freezable? (can beans be frozen?) I've seen a recipe online for mixed bean soup, looks good, but not sure about freezing it.

    Many thanks

Beans freeze very well. In fact I've never come across a soup recipe that doesn't freeze, even those containing milk and cream.

This is our main soup thread which has lots of recipes to inspire you:

I'll add this thread to that one later to keep the recipes together.

  • Brilliant, thanks Pink :)

(I should have known that there'd be one around here somewhere)
