  • I love leek and tattie soup - onions, leeks, tatties and chicken stock. Cook it up until the veg is all soft then blitzed.




    Also, cauliflower and horseradish soup - cauli boiled with chicken stock then blitzed smooth with horseradish stirred through - doesn't take much horseradish; I usually use a nice big tsp for 5 portions or so

    Working through my soup recipes, I can do you brocolli & Stilton, butternut squash, celery & Stilton, chicken, chicken & sweet corn, chilli bean, egg flower, French onion, leek & potato, lentil, mulligatawny, mushroom, parsnip, pea, pumpkin, Scoth broth, smoked haddock (Cullen Skink), spinach, sweet corn, and tomato.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    750g butternut squash
    700ml stock
    1tsp ginger(dried)
    1 onion

    Bung all in together, simmer until cooked (bout 20 mins). Blend, I make this in a saucepan and it makes about 4 generous portions

    Spicy lentil soup :)

    Chopped onion, chopped carrot x2, stock cube, cup or two of red lentils, litre or so of water, chop a fresh chilli (I buy a pack and put them in the freezer, so much easier to chop them frozen!) and cook til soft :)
    Can't think of anything smart to put here...
  • Bacon and cabbage soup with cheese(s) is our favourite in this weather.

    Soften an onion, two cloves of garlic and a leek in oil and butter. Add about half a head of pretty much any type of cabbage (including the tough outer leaves), two large cubed spuds, onion powder and pepper and cook out for a couple of minutes.

    Add stock to cover (ideally stock from boiling a ham joint, but chicken stock is just as good), simmer for 30 minutes then blitz.

    Grill a pack of smoked bacon medallions until crispy, chop up small and add them after blizting, along with some cheese (I use both mature cheddar and parmesan).

    I serve ours with cheese scones. Totally gorgeous and very filling.

    I have a soup maker and I love it! However, I am short of ideas for soups and would welcome any. So far I have done veggie soup and also pea and ham soup.

    Right now I am making in my slow cooker sweet potato, red pepper, and tomato soup, with onions and garlic. I add chilli (quarter of a tsp)and paprika (a whole tsp), along with stock (beef Oxo in this one) and Worcestershire sauce. It's one of our favourite soups; it's cheap, and great as a winter warmer.
