    They freeze really well. I grow quite a lot of them and still have some from two years ago in the freezer. They are as good as ever.

    Made this following a request from DD2, who saw a ready made (expensive !) carton in the supermarket and fancied trying it.

    Gorgeous.

    Have made it again since. DD2 has had it in her flask to school for lunch, but had some of it half-inched by her two mates who took a shine to it, too.

    Didn't follow a recipe - just improvised. Gently fried 1 chopped onion and clove of garlic until softened, added about 4-5 peeled and chopped parsnips and a couple of peeled chopped apples, then covered with chicken stock (made from stock cubes). Brought to the boil, reduced heat and simmered for about half an hour until everything well cooked, then blitzed with a hand blender until smooth, added a little salt and pepper to taste, then it's DONE.

    Made a change from the usual lentil & chorizo / tomato / minestrone / leek & potato which are my standbys.

    Squash, coconut & chilli soup

    1 whole butternut squash
    1 diced onion
    500mL veg stock
    1 can coconut milk
    1 tbsp dried flaked chillies (or 1/2 if you don't like spice)
    4 diced carrots

    I was just wondering if anyone had a recipe for beef and ale soup. My husband saw it for sale in M&S and wondered if I could make him some.

    I have looked on the internet but so far can only find beef and ale stew recipes.

    Sweet potato and ginger soup is one of my current favourites. Also recommend the Covent Garden book of soups. By the way you can freeze ginger too as well as chillies.
