Day 3 (again) for me and it went well, delicious tuna salad with spring onions for lunch and trusty peperami (sorry but I love them!!). Not sure what I'm having for dinner but keeping it strict on carbs, I quite enjoy induction really. At team meeting today, colleague bought in chococlate eclairs! I reisted sucking out the cream! ;-) It turns out I'm not away from home tomorro now, but great idea on what to take with me - thank you all.0

I'm having a great low carb day thanks
Small slice toast breakfast
Sliced chicken and cheesy leeks for lunch
Just had a lovely cheeseburger with caramelised onions and salad, also had a small slice of strawb cake, i think the cake is nicer as a single bottom layer topped with fruit and pour over cream.
I am stuffed
Also did piles of ironing which included 21 man sized t-shirts, they change more often than a couple of girls honestly!!0 -
Hi
I have never been any good at making bread but need to have flax and have now bought some. The health food shop said that Linseed is the same thing so please can someone confirm that? Also best tasting flax recipe from anyone please?
I like flax cracker type thing and flax bread from list. The flax bread isn't really like conventional bread but I find it tasty spread with cream cheese. Flax cracker type thing is rather good. I make about 6 layered in a wicker thing with kitchen roll between each. Will keep fresh n crunchy for a few days.
I like to take a Flax ctthing and top with melted cheese - brie for preference - add black pepper and eat with salad.

Thanks Mercy and Minihauk - I'll give them a try.
I have been asked to phone my GP about the thyroid test and repeat it in 3 months. Can this diet affect the thyroid as I thought that it was good for both the thyroid and diabetes?0 -
Mercy's 'fudge' is a lovely snack, it's more of a crustless quiche really, i layer mozzarella, salami, fried onions and mushrooms, some cherry toms, chopped sausage, diced chillies and pour over the egg/cheese/cream mix and top with grated cheese.. delicious hot or cold, but really hard to resist eating the lot
Mazzers - I love what you've done with this, sounds amazing
I have tried other things in it but not all you've suggested - things to think about there
I mostly use the straight recipe and go mega on the chillis. I know I like that I am, afterall, a chilliheadDid sprinkle cheese on top this time so am grateful for the suggestion
Most of it sank but mine wasn't quite as heftily filled as yours
Yum! It makes such a delicious smell cooking - tis wafting on the air at me right now - but I prefer it cold so must wait
Heyho!

Please please can I have your recipe? I can offer up a bacon and cheese fritatta!
Well done on the weight loss!
I'm having a good day, avoided biscuit temptation when I visited a friend for coffee! I do however feel I'm having 'meat sweats'! LOL I am craving fruit but I remember last time this passed quickly.
Struggling to keep up with the speed of this thread!
I have never quoted before so here's hoping I get it right.
As for the fishcakes, I kind of made the recipe up although helpfully I did weigh everything so that I could count my carbs:
1 small tin tuna in brine, drained
1 good blob of mayo
1/4 of a red onion finely chopped
120g of cauliflower, raw weight then cook
60g of cheddar grated
1 egg
s and p
mix tuna with mayo then add all ingredients including cooked mashed cauli.
Make into patties of desired size, fry in a pan with butter olive oil mix.
They were almost too moist as they went into the frying pan, but I cooked them over a fairly low heat for about 5 minutes until golden and they became the perfect consistency!
I would like to try again without the mayo...it was only added as I was going to make a tuna mayo salad and couldn't face the idea of it!

I've been missing SD too, she's either busy or naughty!
Ooh... i just had a tinge of heartburn, maybe it's lurking carbs?0
