    Hi all!

    sweets - I just got some silicone baking things and can recommend them too. Mine were £1.99 per piece from B&M Bargains. Think home bargains do them now and then too.
    Made latest almond slice recipe in muffin one and rest of mix in a nice 8in cake one. My set is pink! Am so glad it all works so well, I'll be back in there for some more.

    Been good and enjoyed the food so far.

    coconut oil n supplements
    B - Boiled egg n piece of cheese
    snack - piece of almond slice
    L - omlet and salad
    D - will be something to do with aubergine, mushrooms, tomato and cheese
    If peckish later I might well have some cream on a bit of, can you guess?!!! Almond slice!

    Mercy - can you post up your final almond slice recipe please? You were experimenting and faffing around with it and hope that you've now perfected it!

    mmmm!!! just had a lovely tea - I was going to do a sausage and cheese omlette but instead had sausages, burgers and a fried egg!
    as I cant have my beloved tomato sauce, I mixed mayo, chilli and a bit of mint together - was delicious!!!!

    Here it is then you salivating low carber, you! :D It's a long one!



    Almond Slices

    Base
    50g butter
    50g cream cheese
    150g Ground Almonds
    pinch salt
    1 teasp vanilla extract
    ½ teasp baking powder
    1.5 tablespoons splenda
    1 large egg

    Filling
    Sugar free jam or similar. I used raspberry coulis 100g

    Topping
    150g Ground Almonds
    3 large eggs (I used 4 medium)
    4-5 tablespoons of double cream
    1.5 tablespoon splenda
    1 teasp Almond extract
    1 teasp baking powder

    For base first
    Cream softened butter and cream cheese
    Add egg, mix til creamy
    Add vanilla, salt, splenda and baking powder, mix
    Add almonds and mix well.
    Put into fridge to cool. (makes it a bit easier to use)

    For topping
    Beat eggs with cream
    Add splenda. Almond extract, and baking powder, mix
    Add ground almonds. Mix well.

    Assembly
    Press base into suitable container(s), I used a 6 case muffin tray and an 8in cake tin. (Grease if not silicone baking stuff)
    A wet spoon helps to spread it all out.

    Add jam stuff, evenly.

    Spoon over topping evenly. It may not look like it covers it all but cooking mostly sorts that.

    Sprinkle with flaked almonds and press into mix a little with back of spoon.(I used about 50g as I love ‘em)

    Cook at 160’C for 30 mins or so.

    I cut cake into 8 pieces giving 14 in total (including small ‘muffins’). Each has 3.3g carb using raspberry coulis @ 20g carb per 100g. Using sugarfree jam should be more like 2g carb per piece.

    Very yummy indeed.

    Hope you like it! It looks like a long job but not really, nothing complicated but I did use a lot of dishes :)

    hi everyone

    there are some great ideas here - I will definately have a go at the muffins - stupid question I know, but would I just put the bacon in raw?? (i havent cooked bacon before)

    the almond slice sounds yummy - I will get the ingredients tomorrow. Its my favourite anyway, so to be able to have it on this diet will be heaven - with the cream of course!

    Can I ask another stupid question - when Ive been looking at previous posts for ideas and inspiration (Its working!!) there is mention of porridge oats. Am I allowed these?

    Not sure about the bacon, sure someone will get back on that.

    If you like almond slice do try the Bakewell Tart on recipe list. It's a big fave of mine and tastes just wonderful. :D

    Oats aren't low carb really. Which low carb plan are you following? It's generally accepted that you should decide, get the book and follow it. I'm doing Dr Dahlqvists plan. It and links to other choices are on page one of this thread.

  • thanks Mercy. The plan i did the last time was the idiots one - definately no porridge there! just thought it was worth an ask.

    Its my first day tomorrow - Ive got all my food ready for work. Still not sure what i will have for brekkie - maybe some cheese and eggs. We arent allowed to use cutlery at our desks, so it has to be something I can 'graze' on. The muffins will be great once I make them.

    Morning, dark isn't it?

    Bacon - yes, it needs cooked first so either fry it up or stick it in the oven and then cut it up into the muffin cases. You can also microwave it but we don't own such an instrument of torture!

    Mercy - thanks for the almond slice 'refined' recipe, it's my next mission. My only worry is that I'll scoff it in one evening so may have to freeze some of them and take out each day.

    I've had my cup of tea and coconut oil and breakfast is lined up. Lunch will be salady type stuff (only cos I'm really enjoying it) and evening meal is still a mystery.

    Last night before I went to bed I tried on a variety of 'less fat' clothes and was overjoyed :j when some of the more cherished items fitted me, well, not quite fitted but I was able to get them on and off and the time for them fitting completely is not too far away ahead. My plan was to take them to the local charity shop but now a few of them are back in the wardrobe ;) awaiting more regular use. I am really enjoying this way of eating and don't feel deprived, restricted or ashamed any more. And my skin is so smooth too.

    Mercy, your almond slice recipe looks diiiiivine!! I've been waiting impatiently for it too!! I love almondy flavour anything so that & your bakewell tart are most definitely on my hit list!! :D

    I was going to look in Home Bargains for the silicon bakeware but we also have a B&M Bargains so now I have 2 places to try!! Yaay!! I want pink ones as well!! :D

    Gers, the trying on of the clothes must have been a great boost to your confidence, tis exciting when you can fit into your slimmer clothes!! :D I'm hoping I get there too this time :o

    mazzers, you are on holiday, if you want to eat pastries & sup lager then you are allowed!! I give you my permission!! :D Just make sure you have a brilliant time, don't worry about bellies & come back tanned, refreshed & raring to go!! :j

  • My menu for today :

    B - 2 pork escalopes & a rubbish poached egg
    L - tuna salad (lettuce, tuna, spring onions, coleslaw)
    D - fajita chicken, garlic mushrooms & cauli mash

    Was only supposed to eat one pork escalope but I was hungry :o
    My poached egg was a disaster!! Forgot all the tips & I ended up with just a yolk with a bit of raggy white bit - the rest was floating around the water in bits!! :o Think I might have scrambled egg tomorrow :rolleyes:
