unfortunately on atkins I cant have nuts for 2 weeks!!! I might take some eggs though and scramble them with some cream and ham!!0 -
Some weeks I make egg and bacon 'muffins' and store them in the fridge ready. Just cook some bacon, cut it up and stick in muffin tin (I use a silicone one), whisk up eggs and cream or water with seasoning and pour into muffin tin. Then cook until set. I'm not very good about numbers or cooking time but in general the oven is on at 200C.
Too much water makes them all soggy so I've stopped using it. You can add anything to this, herbs, tomatoes, chorizo... endless really. One of these is very filling, very portable and very easy to make.
I've had one this morning, after my coconut oil of course, and I'm just about to head off for a swim and then get ready for my day of work.
Lunch is home made soup again (got loads in the freezer) and then evening meal will be the remainder of the beef strips with salad and my new fav mashed cauliflower.
I hope everyone has a reallly good week.0 -

Cheers for the muffin tip!! do you use whole eggs or seperate them?!0 -
Morning all :hello: including mazzers if she's still lurking!!
That's me been good for a whole week :A & I can report that I've lost a few lbsI lost track of how much during the week (been doing wii bodytest every day & that weighs you) but I think it's about 6lbs
Gers, I've looked for those silicon muffin tins & I can only find expensive ones that I'm [STRIKE]too tight[/STRIKE] not prepared to buy!! Did you say you got them from Asda?? I'll have to look again as I would really like to try your savoury muffins.
Welcome iwilldoit..... (we will have to come up with a suitable abbreviation if you are joining this thread )
You could take a salad into work?? Lettuce, boiled eggs, cheese, ham, coleslaw (HM or full-fat bought). Or HM soup when the weather cools down?? Cooked sausages/meat if you don't mind eating them cold?? Gers' savoury muffins?? Mercy's mexican fudge?? (on page 1 recipes) - can eat it cold but I prefer it warm.
newcook, I usually have a cooked brekkie - sausages, eggs, pork escalopes etc. A cheese omelette is quick & filling on a morning, but I see you were thinking of having that for your tea. I will sometimes have a lighter brekkie - blueberries/raspberries & double cream - but haven't had that in ages.
Right, I'm off to have a shower :wave:0 -
Forgot to include my menu for today
B - 3 chipolata cumberland sausages & 1 perfectly cooked poached egg (thanks to your brilliant tips everyone)
L - coronation chicken possibly with salad & coleslaw
D - leftover chilli from Saturday (testing the theory of whether it tastes better ...)possibly with salad & coleslaw
Have a good day everyone :wave:0 -

Hi - I whisk them all up together though the thought of doing the egg whites all fluffy did occur to me yesterday, but I got lazy! I think the main message is 'suck it and see' -no hard and fast rules.
I based mine on this video clip http://www.youtube.com/watch?v=IuWmokf_v74 though I use deeper muffin tins and add some extra liquid and don't add cheese. HATE cheese and eggs together....0 -

Not mentioned Asda! Can't recall where I got them from, though probably Lakeland http://www.lakeland.co.uk/F/product/13292 but these ones look more shallow than mine so maybe it was just plain old Sainsbury's.0 -

I keep seeing recipes for ‘oopsie rolls’ but they all seem to be American versions – are there any uk versions about?!?! Im thinking of adapting Gers muffin recipe to make shallower muffins or has someone already done this?!?!?!0

Hi all, not reading all the posts, will enjoy that when i'm back.
Just logging in once a day seeing as the lappy is here
Not much chance of me being a crispy sausage, :rotfl: i'm not in it enough, left them by the pool to have my daily snooze today
My belly is back with a vengeance ( i have been eating the local pastries tho, and drinking cold lager)
May as well just think about undoing the damage when i'm home.0
