    VEGAN STRAWBERRY CHEESECAKE
    from veganfamily.co.uk (called Angelic Pie on there)

    1 block of silken tofu (firm can be used but blending will take longer)
    1 punnet of strawberries (I've made it with raspberries but used more sugar - any berries will do really). Keep a few back for decoration
    3 tbs sugar (or to make it sweet enough for your own taste)
    1/4 cup oil
    a little soya milk
    a few drops of vanilla essence or a scoop of vegan vanilla ice cream (obviously the essence will be cheaper!)

    1 packet of biscuits of choice, crushed (I used digestives - Tesco Value are vegan)
    3 tbs vegan marg, melted

    Combine the biscuits and marg (or put biscuits and unmelted marg in a food processor and whizz up). Press mixture into a springform tin or an ovenproof dish.

    Whizz all the topping ingredients until smooth, pour onto biscuit base and bake at about 200C/400F for about half an hour or until firm. When cool put on saved berries.

    CHOCOLATE CHEESECAKE

    8oz/200g digestive bisuits
    3oz/75g vegan marg

    Make a biscuit base by mixing biscuits and marg, then press into a 6 1/2" or 7" loose-bottom or springform cake tin.

    1 tub (250g) vegan cream cheese (tofutti do them - but make sure you don't get the flavoured ones - garlic won't be very nice in this :rotfl:)
    6oz/170g soft tofu
    1 tbs oil
    2 1/2oz/60g caster sugar
    125g plain chocolate
    1 tsp vanilla essence

    Melt the chocolate, then put tofu, melted chocolate, oil, sugar and essence in a blender and blend until smooth. Mash the cream cheese in a bowl and add the chocolate mixture. Pour onto the biscuit base and chill for a couple of hours.

    Thanks for the recipes Justamum, Ive got a question, can you buy 'soft tofu' or is it silken tofu ?

    Also I cant remember who recommended vanilla swedish glace, but I brought some today and you were right, it is gorgeous, I wish Id brought 2 or 3 tubs now ;)

    You can buy silken tofu as either soft or firm - though even the firm isn't as firm as the unsilken one iyswim! I usually use the soft silken one, but have used the firm silken one and it still works. Actually the chocolate one which isn't cooked might be better using the firm silken. The angelic pie on the website is made in a glass casserole dish (she has posted pictures!) so she obviously serves hers up as a pudding rather than a tart (it is a soft filling).

    The Swedish Glace ice cream is yummy. Unfortunately our H&B has stopped selling it and only sells Tofutti, which isn't as nice.

    Fernlibee, sorry the names confusing, its nothing to do with normal cystitis, its inflammation of the lining of the bladder, theres no infection, its realy painful and I cant eat and drink certain things that make it flare up like citrus fruits, tomatoes,caffiene and alcohol. Its a chronic disorder, but Im having treatment at the hospital for it.

    There is also a neapolitan version, vanilla, chocolate and strawberry in one pot. They sell it in tesco. In our tesco its not next to the vanilla its next to the dairy neapolitan.
    In our sainsburys we can get chocolate or vanilla.
    Have to go to Holland and barrett for raspberry.

    But unfortunately can't get there choc covered lollies or there blueberry ice cream anywhere local.

    I just remembered what I came on here for :D it's my birthday on Saturday and my ds2 and his girlfriend have rang and want to come round Friday evening to bring my pressie round, they said we can have a takeaway and make a night of it :eek: what can I eat ? theres a chinese and an Indian up the road from me, I dont like anything too hot and spicy, any suggestions ?
