    Evening all,

    PC has been playing up and have had no internet for most of the day.

    No rain here today and sunset looked red enough so maybe we will get 2 whole days of rainlessness (is that a word??)

    Went for a wander in Tesco to-day on my own, needed some stuff so spent around €30...bought cream to make a dish with crab meat I had in freezer....basically cream, heat crab meat, mix cooked tagliatelle through, add fistful of chopped herbs....very nice but made too much, can't freeze because of crab so guess what we are having for lunch tomorrow....

    Evening everyone; this is the first chance I've had to post since this morning. We had a lovely pub lunch with our friends then came back and slept off the two glasses of wine. I didn't feel like doing the roast (drinking at lunch time put paid to that!) so we had beans on toast and freshly-picked blackberries and cream. I'll do the roast tomorrow.

    We moved my office around this morning and couldn't be bothered to finish it off so I'm surrounded by disorganised files, books and paperwork - that'll be another job for tomorrow along with the ironing.

    We've had some rain but it's not been too bad today.

    (((Hugs))) to PenPin - I hope you're feeling a bit better now. It must have been thrilling seeing your DD on the TV!

    Welcome to Scotrae, Consultant and Jo - if I've forgotten anyone, please forgive me.

    Well, I've just had a bath and I think we're heading for an early night tonight. We both have things to do tomorrow that should have been done today so hopefully a good night's sleep will do the trick.

    Thanks for moving my post to this thread and to those who have welcomed me back into the fold and given me words of reassurance. A special thank you for my personal message.

    I'm off tomorrow trying to make some money selling at a mini festival but I'll check in to tomorrow's thread for my shot of motivation.

  • Apple cakes sound tasty, I must have a hunt about for that recipe....


    To save you some time looking hopefully!

    Aunty Sallys Apple Cake (recipe given to me by my actual Aunty Sally!!)

    This is ridiculously easy to make!


    8oz self raising flour
    4oz marg or butter
    4oz castor sugar
    8oz roughly chopped apples
    4oz saltanas
    juice of half a lemon (soak the apples in this once chopped)
    2 med-large eggs
    2 tsp cinnamon
    1/2 tsp ginger
    • Mix flour and marg til it resembles breadcrumbs.
    • Add all other ingredients
    • Let sit for 5 mins
    • Grease tin
    • Place in tin (push up bottom type if available but not vital)
    • Cook at 180 degrees Gas mark 4 for 1 - 1 1/4 hrs or til a knife pulls out cleanly
    Delicious hot as a pudding with custard or cold as a deliciously moist cake.
