Chilli con carne recipe & questions

    Here is mine! Makes a lot but easy to freeze what you don't want.

    700g lean minced beef
    2 large onions
    5 garlic cloves (or garlic paste)
    1 red pepper
    1 green pepper
    3 red or green chillis
    2 tsp ground cumin
    1 tin kidney beans 400g
    1tsp brown sugar (I use the sachets from cafes!!)

    fry mince, add chopped onions & crushed garlic until soft. Add chopped peppers & chillies, tomatoes & a pinch of salt & pepper. Cover & simmer for 2 hours. Add cumin, kicney beans & sugar & cook for a further 10 mins.

    I tend to make it the day before & then reheat whatever pertions require for the next day,
  • I always put a tin of baked beans and a tin of chopped tomatoes as well as kidney beans in mine to make it stretch further.

    I do the same as above, but cheat and use Colmans Chilli mix for sauce. It's delicious!

    I always throw in a few handfuls of red lentils, stretches it further, tastes fantastic and thickens the sauce nicely.

    I also add dark chocolate (rather than cocoa), and a little squeeze of lemon. You don't know they are in there, but notice the difference if they are left out iyswim.

    Makes it not terribly authentic, but it tastes great!

    I am looking for recipes to cook in my new slow cooker, but not having much luck.
