We had people round and I was making bolognaise. I asked DH to buy 500g minced beef for all of us. He was horrified and insisted that he get 1kg. I made the sauce without any fillers. It was nice, but I'm now used to less meat and more veg in my sauce, so I didn't like it as much as my usual recipe.
To bulk out the mince, I use 2 large onions, some garlic, 2 large carrots (grated), a large tin of sweetcorn, and whatever veg is in season, chopped small or grated. I use peppers, courgette, pumpkin, green beans, celery, mushrooms.
I add 2 tins of tomatoes, and as much red lentils as looks rightI then add more water, as the lentils soak up quite a bit.
We then eat 4 servings that day and I freeze the rest in 2 margarine tubs for later.

Snap, Penny, I also get 12 portions at least out of 500g steak mince. I brown it all and freeze in starter portions, one from fresh and two further for the freezer, each portion making a meal for 4 and sometimes even then it can stretch to 6 or with leftovers. Then when I take out a frozen portion, I have the option of making curry, spag bol, cott pie, or whatever else I feel like turning it into. I too use all the aforementioned veg and lentils, but I add broad beans, kidney beans or pearl barley depending on what the final result is going to be.Official DFW Nerd Club - Member # 593 - Proud To Be Dealing With My Debts!0 -

The ideas on this thread have been amazing, but I'm sure we'd all like to know: dazed_2008 - how did you get on?
When you do get around to trying the ham shank and pea soup, try saving the ham, just put a wee drop chopped up back into the soup and the use some of the rest for a potato and cheese pie, then you've still got some left for a quiche, chicken and ham pie, ham and pasta bake or a ham, spring onion and mayo sandwich filling or a risotto. Of course this all depends on the size of the ham shank, and how many people you are feeding. The list is endless for feeding the family, and my baby loves the bone.
P.S Please don't report me to social services, my baby is a gorgeous cute'n'cuddly collie.Official DFW Nerd Club - Member # 593 - Proud To Be Dealing With My Debts!0
