Make meatless burgers from porridge oats.

Mix 2 eggs some sage and about a cup of oats together, make 4 to 6 "burgers" fry both sides in a little butter on both sides. Here is the trick, in a jug add beef stock cube (or two) with hot water about 3 or 4 cups, pour it over the burgers and simmer till water is all gone.
    Grocery Challenge. £400. - £35.22 + £19.80 + £109.01 = £164.03
    Other spends (Clothes Luxuries etc)£11.97 + £1.19 + £7.36 + £69.00 + £38.50 + £5.50 + £23.00 +£2.00 = £158.52:shocked::sad:

Hi everyone, just to say thanks again. I have actually takne all these ideas down, created a meal planner, and it looking good for the next four weeks never mind the this one!
I really can't thank you all enough-it's so kind to spend all this time giving me ideas, I really do appreciate it.

I am feeling very proud of myself-I found a frozen pack of pork mince at the back of the freezer...and have made meatballs by blitzing the mince, an onion, breadcrumbs, grated cheese and some sage that's growing outside with loads of pepper (some people add an egg but I found that a little milk worked just as well). It made loads! Enough for about 3 dinners of those, spaghetti and a tin of tomatoes!
Someone asked for my tuna fishcake recipe so here goes...if I can just warn you though I do tend to make it up as I go along
...tin of tuna, mashed potato (2/3), spring onions and blitz together. If you have the time you can dip in beaten egg and then in breadcrumbs. Either way you can bake/fry and they're lovely with veg.

    Thanks again xx

Sound good. I'm going to try them but hoped you could clarify the following for me please :) :

    1) What you mean by mashed potato (2/3)
    - two thirds of the fishcake mixture is potato or
    - use two thirds of one potato to one tin of tuna or
    - use two or three potatoes?

    2) Blitz together as in use a food processor? I imagined just mixing by hand.

Thanks. And sorry if I'm being daft. :D

Sorry Lunar Eclipse, I didn't make it very clear.
I usually use around 2-3 potatoes (cooked and mashed), finely chop 2-3 spring onions and mash them into the tuna (you can also add sweetcorn etc for extra veg).
You can also just dust in plain flour and shallow fry in a litttle oil (or jsut as easily bake in the oven).

    Hope that helps

Look up a recipe for a greek lentil soup called 'fakes'.

It consists of lentils (green continental (60p), one onion, water, olive oil, salt and some bread for dipping. A vat of this should last you two days and cost c.70p to make (minus the bread)

It sounds awful but is actually the most delicious soup i've ever had and so good for you. We live on this when we're really skint.

Also, as an ex student, veggie bolognese.....

    mushrooms=meat,
can of chopped tomatoes (c.15p from asda)
    Sapghetti (20p)
    Gravy granules
    tomato puree
bit of oregano, salt and olive oil

This fed me for about four years.
I'll have some cheese please, bob.

Also, (as student in holland), a dutch staple dish called stamppot

basically mashed potatoes with peas, bacon and gravy. It is delicious, just mash it all up together. A better alternative to bacon is a diced mattesons sausage.

edit: it also has boiled cabbage in which, gross as it sounds, is fantastic in this.
I'll have some cheese please, bob.

It's worth looking for Lettuce, Cress/Mustard, Raddish seeds now in Wilkinsons/Woolies etc for end of season price reductions, it's still not to late to put a few in a big pot and in a just a few weeks you will have fresh veggies, for very little money and effort.

Another good cheap snack are Oatcakes, these are healthy and simple to make, and can be made naughty with Orange peel / any fruit, pinch of mixed spice , bits of chocolate or kept plain and used as a savoury snack with cheese etc.

As there is no sugar this is a good healthy snack, that can be tweaked with to make so many variations. You can if you have any left over 'orrible Lidl Christmas booze (Gin,Whisky,Sambucca etc) use this instead of water....really naughty.

    Oat Cakes
2oz Porridge Oats (can stick in blender for a finer biscuit)
    2oz Plain Flour
    1tsp Marg/Butter
    Water

Mix Oats and Flour, add Marg and a tablespoon of water at a time until a fairly dry dough is made, roll out and cut to shape
cook at 200c gas 6 until just lightly coloured.
    Allow to cool and enjoy!
My Mind wanders, if found please return.
