Not so much of a recipe as it changes everytime I cook it but this is what I do.
Gently fry onions, bacon and garlic. When bacon is cooked throw in some sliced red and yellow peppers and a tin (or 2) of chopped tomatoes, a chicken stock cube, oregano/basil, black pepper and a pinch of sugar. (I sometimes add in mushrooms/courgettes/other veg as well.....depends whats in the fridge that needs using up). Simmer gently until sauce is slightly thickened and then add in cooked chicken (remnants of Sundays roast usually).
Starting with the chicken/bacon/tomato mix, layer up in a lasagne dish as follows:
Chicken
Lasagne sheets
White sauce (or cheese sauce depending on preference)
Chicken
Lasagne
White sauce
Finish with white/cheese sauce layer. Sprinkle over grated cheese and top with some sliced tomato. Cook at whatever temp lasagne pkt instructions say (190c for 30-45 mins?) and cheese is golden and bubbling.0 -

Hi there, I used this one last time.
It makes enough to feed 10 - one to cook and one to freeze. It was absolutely delicious and my 3 yo DD specifically asked me to make it for her again.
You could probably make it cheaper by bulking out with more veg, adding less cheese, etc but, tbh, I wouldn't touch it. Delicious as it is.
It may look like a lot to do, but it's worth it. And the white sauce is an absolute doddle! Enjoy0 -
