To make lasagne healthier, you could make a lentil sauce instead. You could make cauliflower cheese and freeze that ahead to be microwaved through when your ready to eat it. I'll have to come back with a fuller list when I'm not so tired and have more time  it could be a loooong answer ;)

I make cheese sauce the other way.
Melt butter in saucedpan on low heat.
Mix in flour to make a paste.
    Add milk.
    Raise the temperature.
Mix in grated cheese, stirring as you go.

The bolognaise sauce is as above, at least one can of tomatoes in it and cook for about an hour to boil all the water off.
    Happy chappy

With mine I do carrots, brocolli, cauliflower, sweetcorn and any other veg I have in. DP has chips or potato wedges usually, sometimes a slice or 2 of garlic bread, or even oven baked onion rings.
One day I might be more organised...........

I think I'll try tomstickland's sauce next time as it sounds simpler than the one I did.

  • No-one's really analysed making a lasagne in this thread. I think it's useful, so you can see exactly how flexible a lasagne can be!!!!

Lasagne is made with sheets of lasagne interlaced with 2 different sauces - a cheesy/white sauce and a tomatoey one. Sheets of lasagne used to be horrid things that needed pre-boiling before you used them, but nowadays you just use them straight from the packet (or make your own if you are truly virtuous).

The cheese/white sauce is simply a cheese sauce, or white sauce for those allergic to cheese, WITH NUTMEG. OK, you can make it without nutmeg, but it isn't the same.....

The tomatoey sauce can be almost infinitely variable. The 'classic' lasagne has a tomatoey meat sauce, of course (v similar to a Bolognaise). But you can make this sauce with tuna, other fish, veggies and nuts for the veggies - choice is infinite. You can include

    courgettes
    nuts (for the veggies)
    carrots
aubergines (makes it a bit moussaka-y)
    onions
    garlic
    mushrooms
    pesto
    etc etc etc.

Basic assembly is a layer of sauce, layer of lasagne, layer of the other sauce, layer of lasagne. Top with the cheesy or white sauce and finish with a layer of cheese unless you are doing a cheese-free version, in which case sunflower seeds, pine nuts etc are nice on the top!

Bung in oven (see lasagne pack for cooking times as everything else is more or less cooked already) and enjoy! :D
