"Award-Winning Porridge
Serves 4
Lynne Benge is the current champion porridge maker – she won the 2005 Golden Spurtle Award. Competition for the year’s title was fierce, with competitors originating from Scotland, England, Sweden, Spain and Israel. After a morning pedalling in the snow, hot porridge was the only breakfast item I could think about. Lynn shared her porridge secrets with me: its all in the stirring and the wee pat of butter she adds at the end gives her porridge a rich finish.
Ingredients:
300g oatmeal
900mls water
300mls milk
15g butter
½ tsp salt
Method:
1. Add the oatmeal, water and milk to a pan. Put pan on the heat and keep stirring all the time.
2. Bring to the boil, add butter and salt and keep stirring until it thickens. If it is too thick, add water as required.

ahh the joys of poridge. I remember my mum getting up early on the cold winter mornings and nuking porridge in the microwave, always boiled over and we got it scraped of the plate into our bowls, but hey it tasted great, especially with a squirt of condensed milk, mmmmmm.
Now 15 years on she makes it with oatmilk (since she went to soya or rather off dairy) and it tastes even creamier than with milk, its a double mmmmmmmmmmmm.0 -

My method is simple.
If it's just me eating it - the n about 15g oat to about 80 mls skimmed milk, zapped in the microwave for 1 minute - stirred, then back for another 30 seconds.
Top with a squirt of runny honey and a spooful of pumpkin and/or sunflower seeds.0 -

LOL That was a short summer.
This thread lay dormant from the middle of May till now. It's only August and we're already cold enough to be getting out the porridge oats.
