I have tried various cupcake recipes and my favourite is Nigella's.
I am not particularly good at baking but I find it really easy and satisfying to bake these. My family love them. I sometimes add raisins which go down well.
They are easier and rather nice to do without icing. I just chuck it all in the mixer and then in the cases.
If I am icing as mentioned I just cut any peaks off to make them flat.
