I would love to be able to make nice fairy cakes, mine never turn out very nice. They always go a funny shape, burnt on outside not cooked in middle, too dry, no flavour, the list goes on..... I did see a fairy cake cook book once this thread has just tempted me to go and buy it!!!!!!!!

Mine are variable too. So who holds the Ultimate Cupcake Recipe? Are they prepared to share it with the rest of us?
The other thing is with the price that companies charge... they know how to get them right every time!
My DD did these for something or other, relatively plain, but lovely."Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"

I've now realised that my sisters were well ahead of their time....in 1978 when I go married for the first time and was still at uni, my two sisters[they were 15 and 13 at the time] made some fairy cakes for my wedding and iced them with bright blue and bright green icing and sprinkles:TWe don't need to do it perfectly - good enough is exactly that GOOD ENOUGH.0

I read in the sunday press about how cupcakes are taking off. I made a fairy cake recipe today and used muffin cases. I used 2 eggs, 4 oz sr flour, 4 oz caster sugar, 4 oz soft marg and 1 tsp baking powder. I made 8 (so they were big), instead of 18, and baked in the muffin cases at 200 for 20 mins. Such an easy recipe and mixed all in one
I topped with water icing (icing sugar and a little water) and sprinkled with lots of hundreds and thousands. I can`t have spent more than £1.50 for 8 big big cakes and I used organic eggs and flour and the marg was flora active, which is probably dearer than butter
some people have more money than sense
thank you kittie!! i've just doubled your recipe and made it into 24 medium sized cupcakes, which look fabthink i might do some green icing...

I agree these cakes look great, I would begrudge paying this amount usually, but for a special occasion when you need lots and appearance is important its not too bad. After all convenience costs. (I sell handmade cards and have the same sort of comments on my pricing, people can always make them cheaper, well they aren't the people i'm aiming at).
My cupcakes always rise to a peak, this is not so good when you want to ice them, but great for butterfly cakes.0 -
I think this is a lovely idea for a wedding to make a change- there are always new fashions etc coming along and these are lovely.
I have been making wedding cakes for years and will source one of these stands now.
It may seem a lot for fairy cakes but a three tier fruit cake can be £500 quid in some places (sadly not from me although mine are fabulous:p) .0 -

I made cupcakes today, hadn't seen this thread tho. I want to know how to make the butercream really stiff. Is it just a matter of less butter and more sugar???? I would post a pic but I'm rubbish at that sort of thing.0
