I read in the sunday press about how cupcakes are taking off. I made a fairy cake recipe today and used muffin cases. I used 2 eggs, 4 oz sr flour, 4 oz caster sugar, 4 oz soft marg and 1 tsp baking powder. I made 8 (so they were big), instead of 18, and baked in the muffin cases at 200 for 20 mins. Such an easy recipe and mixed all in one

I topped with water icing (icing sugar and a little water) and sprinkled with lots of hundreds and thousands. I can`t have spent more than £1.50 for 8 big big cakes and I used organic eggs and flour and the marg was flora active, which is probably dearer than butter

I was thinking about making some cupcakes but I don't like using american recipes that call for 'cake flour' and 'shortening' as they never quite work when converted and need alot of tweaking so I am pleased you got such good results.

Can I ask, how far up the muffin case did you fill? Did they cook through OK? I am quite excited about trying this out, might make something like this.....yumm

Sorry to go against the grain, but i don't even think those cupcakes look good. To me they look like the ones my step-kids make at school. They may taste good but I certainly wouldn't pay so much for them.

Kittie - Thanks for the link to the Crumbs and Doilies website!;)
There's some really good decorating ideas there. My little ones have their birthdays in the same month and are still small enough not to mind a combined party. I usually make cupcakes for the party bags for the kids to take home. Last year the theme was Cat in the Hat so I did red and white stripey tops. They both had small birthday cakes as well but there never seems enough to feed the hoards that come to their party!:rotfl:

It isn't a question of money or sense, it's a question of economics and also being paid a fair wage. In the case of the former, if C&D can get £20 per doz for cakes, then that is what they are worth! They're running a business and need to pay their staff a fair wage, as well as retaining a profit for themselves. That's why they're in business... to make money.

In the case of added value on food, it's never the actual food cost that is the big item, it's either labour or profit that would count for big sectors of the price.

It may not be worth it for you to pay £20/doz for fairy cakes, as you have the time and skills necessary to do the job yourself.

Although I like traditional children's fairy cakes (ie water icing and hundred and thousands), if I were to serve fairy cakes at my (currently totally theoretical!) wedding, I would want something a bit fancier.

Purpleivy, you're so right. Anthony Bourdain in 'Kitchen Confidential' writes for a restaurant to make money they have to charge atleast four times the cost of the raw ingredients (when you factor service, location etc).

i agree with another poster above. We may all be able to make cakes for circa £1.50 but we dont have to pay for peremisis, hygiene courses, staff, insurance, web design, packaging, delivery, research, and earn a living out of it now do we ! have a though folks. businesses have owners who need to live also (i hear a smart !!!! saying "let them eat cake").
:D The glass is always half full, no exceptions !!:D

When we owned a bookshop, and people asked us to order books for them, we had to take great pains to hide the computer screen, which would show the price WE paid before mark-up. People were strange about us charging any sort of mark-up. "Why should I give you £10 for a book that only costs you £6?!" Well, because after we pay postage and VAT and, you know, the electric bill, there still has to be something called a profit. Because this shop isn't just a hobby."
