I never bake with eggs and don't have a problem - I replace the volume of egg with liquid - usually soy milk - and my cakes come out fine everytime. I use my usual recipes, usual ingredients

Depending on what you are making soya flour or gram flour (chick pea or besan are it's other names) mixed to a thin paste with water can be used. Gram flour can be bought really cheaply from an Indian Food grocers (it's the flour for proper pakora batter).The truth may be out there, but the lies are inside your head. Terry Pratchett

This is from the Vegan Society website:
instead of 1 egg, you can use...
• 1 tbsp gram (chick pea) or soya flour and 1 tbsp water
• 1 tbsp arrowroot, 1 tbsp soya flour and 2 tbsp water
• 2 tbsp flour, ½ tbsp shortening, ½ tsp baking powder and 2 tsp water
• 50g tofu blended with the liquid portion of the recipe
• ½ large banana, mashed
• 50 ml white sauce
If you want to replace the oil in a recipe (to reduce the fat content, for example) you can use an exact measure of applesauce (I use baby food apple puree). The texture isn't the same but it can be surprisingly good. It works best if there wasn't a lot of oil in the recipe to begin with.0 -

Hmm, I'm a bit skeptical myself about making sponge type cakes without eggs. I did someones best ever eggless sponge and it was minging. I'm really not fussy at all when it comes to food, particularly cake, but I found this most unpleasant.
