    Hi everyone!

    I'm in the middle of baking three batches of buns for DD to take to school (it's her stuffed toy's birthday...) and I am using the 6oz sugar, 6 oz butter, 6 oz flour, 3 eggs method per batch.

    I needed three lots of that and so I put 18oz of butter and sugar in a bowl. Then realised I only have 7 eggs and I need 9. I have mixed the 7 eggs in and then realised how much I'll be wasting if they don't work :o

    Will I have to buy eggs :( or is there any thing else I can use does anyone know please?

    My chooks have stopped laying since the rain, hence the shortfall! Bah.

    I would use either 1tbs milk or 1tbs mayonnaise per egg in your case, with no ill effects.

    Two choices:

    Split the seven eggs into three.

    Go out and buy some more!

    I have in the past used vinegar quite sucessfully, its an old WW2 tip.

    Banana works really well, as does stewed apple. If you happen to have linseeds around, 1tbsp ground linseed mixed with 1tbsp water works as a great substitute - used a lot by people who can't/won't use eggs.
