Pork loin can be quite dry and because it's pork there's a tendency to overcook it. I like them served with a creamy sauce:
Pork steaks (sliced)
onions (finely diced)
mushrooms (optional)
mixed herbs
garlic
black pepper
a glug of white wine
cream
pork stock cube
Fry the sliced pork. Remove from the pan and keep warm. Add the mushrooms, onion and garlic to the pan. When they're cooked add herbs, pepper, stock and wine and reduce the sauce. Pop the pork back in bring up to a simmer. Thicken with cornflour mixed with a little cold water if necessary. Stir in the cream just before serving. It's good with rice, or baked potatoes and salad.
There are some nice ideas on this older thread:

I'll merge your thread with that one later to keep all the suggestions together.

I do virtually the same, but add a bit of either wholegrain or Dijon mustard as well. Creme fraiche or yoghurt can be used as long as you don't boil it.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

Hi, if I'm thinking of the right thing, I make schnitzel from pork loin.
You slice it into medallions and hammer it thin, flour, egg and breadcrumb and shallow fry. It's yummy. For a healthier alternative, you can oven cook it too.
Or, I've used it by cutting into strips, frying and then making a creamy/white wine/mushroom style sauce and serve with pasta or rice.
Is the 'streaky bacon' thick? Is it the stuff crackling is made from? Sorry, I'm not too good at this either. To me it sounds like the stuff you might lay over the top of a roast chicken. You can also simply pan fry this too. But personally I'd have it as part of a roast. If again I'm thinking of the right stuff. Oh actually, you could use it in making a tomato based pasta sauce?
Hope that helps.0 -
If you look on Black Saturn's meal planner in the OS board you'll find a recipe for potato bake. I've made this but added chopped streaky bacon and its come out lovely.CC2 = £8687.86 ([STRIKE]£10000[/STRIKE] )CC1 = £0 ([STRIKE]£9983[/STRIKE] ); Reusing shopping bags savings =£5.80 vs spent £1.05.Wine is like opera. You can enjoy it even if you don't understand it and too much can give you a headache the next day J0
