I bought some pork medallions in Tesco last night. OH isn;t too keen on pork, but he will eat it. I want to make it more interesting than just pan frying them and doing veg.

Is there a nice sauce I can make? I don;t like apple sauce, or any fruit sauces with meat, so it needs to be savoury.

Or is there a casserole I can make with it?

Just looking for something more interesting really, and Delia has been no help!

I did buy a packet mix for peppercorn sauce at OH's insistence :o but I'd rather make my own sauce. There were no green peppercorns in tesco so I can;t do peppercorn sauce.

    All ideas gratefully received.

    or wholegrain mustard?
Pan fry the pork in some butter, and then deglaze the pan with about 1/3rd cup of wine or water or stock, then 1 teaspoon (or so). Stir it around a bit, whisk in a bit of cream (or milk) and season.

I would pan fry them or grill them and make a nice mushroom sauce.

  • You can add some cream and green peppercorns to the gravy - that's delicious :j

As you're asking for more recipes, I'll add your question to a thread we have on pork loin steaks (which are pretty similar to medallions ;) )

  • My lovely DH just cooked pork loins with the following

Dried Cumin, Paprika, crushed garlic, oil, thyme and S&P

He put it all in a bag with the pork to marinade in then griddled and served with a gravy that included the juices from the griddle

    Delish!!!!!

    Hi,
I'm looking for a nice pork recipe (not for pork chops). I've done a little searching online but nothing immediately jumps out at me. It'll be serving 4 (no dietry requirements), and providing my car works, we can get meat tomorrow.
    Thank you!

Pork with mustard sauce. It's a creamy type of sauce, not too strong. If I can find the recipe!
