Pork and stewed red cabbage with apple; pork with sauce of caramelised onions (loads), cider and French mustard served with green beans; Chinese style pork with spices and mixed peppers?

Gently fry some chopped leeks, garlic, and mushrooms, then pour in some creme fraiche to make a sauce - absolutely delicious with pork chops or sliced fillet. Recipe from a genuine French chef who uses creme fraiche for all his lovely sauces!

I have some Pork loin steaks in the fridge that where bought whoopisied so need eating, only problem is because they where cheap i bought quite a few packs :o Some have gone into the freezer but when i told OH that we where having pork for tea he huffed.

He's not a big fan of potato at the best of times, but i also have some lovely new potatos anyone got any nice meal idea's that involve new pototo's that arn't just boring grilled pork loin and boiled potato's with butter.

So i can try and keep him happy.
  • I love pork and apples cooked with cider

Cook seasoned pork in frying pan and set meat aside into warm oven. Cooked chopped apple wedges in same pan til browned then set aside with meat. Add half bottle of good cider to pan and reduce by half. Add cream or creme fraiche, and a generous handful of spinach and cook until spinach is wilted. Add meat juices from plate into sauce and serve pork and apples covered in sauce with new potatoes and green beans.

    Yummy!!

    Hi Ellie,

As your thread has dropped down the board I've added it to the main thread on using pork loin steaks where you may find some inspiration.

This is an ancient recipe (very pre-metric) I've used for years. It's not very gingery, so adjust if wanted. A bit different from the same-old stews.
    Ginger spiced pork
    1oz flour
    Salt & pepper
    1 level teasp ground ginger
    1 1/2lb cubed pork
    1 tbspn oil
    1 onion, sliced.

    Sauce:
    1 tin tomatoes
    1/4 teasp tabasco
    4oz button mushrooms (optional)
    1 tbspn Worcester sauce
    1 level tbspn brown sugar
    2 tbspns malt vinegar
    1 clove garlic, crushed
    1 bay leaf.

Mix flour, salt, pepper, ginger in a bag, add pork to coat. Heat oil then brown pork. Transfer to ovenproof dish.
Fry onion; combine all sauce ingredients and add to pan. Bring to boil then pour over pork.
Cover pan & cook in oven 160c for 2 hours. Remove bay leaf, check seasoning & serve.
Nice served with taglietelle or rice as a change from potatoes.

Ps. Can be done with beef instead. Also, can add a tin of kidney beans and a sliced red pepper

Hi, This is what I'd do:-

Coat pork in flour and brown.
    Set aside in casserole dish
Brown some onions in the same frying pan
Slice some celery and carrotts and put in dish
    Pour onions over
Make stock, pour over 3 parts stock to one part cider
Good sprinkle of mixed herbs and black pepper
Gas mark 5 for about 1½ - depending on what it says on the pack
Check to see if its bubbling
If so, pour out abit of the juice and mix with a little bit of cornflour.
Tip this back in for last ten mins.
